Chocolate Cream Pie II

Both my husband and I grew up with the chocolate pies made from instant pudding. The first time, I made this (for Christmas), my husband couldn't understand why I would bother making it from scratch. Then we tasted it. Now, we will never go back to the instant pudding pie. On this first try, I used whole milk and white sugar just as the recipe is written. Today, I made if for a second time, using nonfat milk and 3/4 cup splenda blend in place of 1.5 cup sugar. This lighter version came out just as velvety smooth and delicious.

Wild Rice Harvest Casserole

This recipe has great flavor and texture. I got a lot of compliments on it. It took a while to assemble and needed to bake, covered, longer than perscribed to cook the wild rice, but it really is good.

Moroccan Lentil Soup

This is a great soup. I'd give it 5 stars, but I didn't follow the recipe exactly. I used 4 cups chicken broth and 2 cups vegetable broth for the liquid. I didn't have cardamom so substituted curry powder, which, with the garam masala, gave it a very Indian flavor and aroma. Makes a hearty, satisfying meal over rice, and would also be good with couscous. Best of all, it's really easy. Just chop some vegies and open some cans. Let it simmer while you take the dog for a walk, and when you get home, make some rice and dinner's ready.

Fudge Brownies I

This recipe is really good, but I did follow some of the modifications of other reviewers (2 eggs, etc). Next time, I will try the recipe as written. The brownies are really chocolaty, but are also kind of buttery and fudgy. Really good.

Corrigan's Minestrone

Loved the texture of the different veggies coming together with the beans, potatoes and pasta. Makes for a hearty soup. However, flavor is king, and this soup is pretty bland.

Jamie's Cranberry Spinach Salad

1250 positive reviews can't be wrong! This is now one of my favorite salads. I use honey instead of white sugar in the dressing, but otherwise haven't changed a thing. Thanks for sharing.

I've tried a few different recipes for banana bread, but this is the best yet - with or without the chocolate chips. Seems like it might also be good with dried fruit.

Chicken Pot Pie IX

This recipe is a great foundation. I made some modifications to this recipe that turned out quite well. I'm not a fan of boiled chicken so I browned the cubed chicken breast in olive oil to sear in the juices. Then I added the vegies, stirred them around a bit, and covered them to steam in their own juices until just tender (about 8 minutes). Then I removed the vegies directly to the pastry shell. In the same pan, I sauteed the onions in olive oil, and added the flour. When the flour had cooked a little, I added a cup of white wine to deglaze the pan, brought it to a simmer and added the broth. It thickened up nicely. I used sage instead of celery seed. The sauce had a gravy-like texture and the wine added terrific flavor. I used an egg wash on the pastry and it came out really shiny and golden. My husband and I loved this.

Quick Chicken And Wine

I'm only giving 4 stars because the original recipe was a little bit plain, but it's a great start and is easily spiced up. As another reviewer suggested, I added some dried basil and oregano leaves to the cheese. I also added a jar of artichoke hearts, drained and chopped, and three cloves of finely chopped garlic to the wine. The artichokes give the sauce a really great flavor. The cheese makes a nice crust which seals in the ckicken juices. My huband and I loved this.

German Leek and Potato Soup

Made this with the ham bone from our Christmas dinner. What a yummy, hearty winter soup. The only thing I did differently from the recipe was I subsituted 1 cup of white wine and 1 cup of chicken stock for 2 cups of the water, just to add a little extra flavor. Don't think it made much difference, though, as the ham and leeks are the dominant flavors. Mine wasn't super thick because the potatoes I used were a tad small (yukon golds). Will probably get bigger russet potatoes next time.

Downeast Maine Pumpkin Bread

I made this a week ahead (2 big loaves) and froze to serve on Thanksgiving morning, as we had family coming in early. It was great with coffee, tea, and cranberry spiced cider (from this website). I used whole wheat flour and added chopped walnuts for additional texture. Froze very well and tasted delicious.

I made this at Thanksgiving. It was ok, but not a huge hit. The acidity from the lemon seemed to overpower the spices and gave it kind of a bad wine flavor. I won't make again.

this is a great party salad because it's very colorful. We made it at Thanksgiving (made it the night before and added the bacon at the last minute). We used Craisins instead of raising. yum.

Roasted Pumpkin Seeds

Yum. Followed other reviewers advice and boiled them in salt water and let dry overnight before roasting. The cooked pretty quick in my oven and need to perfect the timing a bit more.

Perfect Turkey

Used this recipe for Thanksgiving. It worked great. Brining is definitely the way to go for moist, flavorful turkey. I used a brining bag since I didn't have a vessel big enough for my bird. The white wine adds a nice flavor to the drippings/gravy as well. Thanks for the recipe.

Spicy Baked Sweet Potato Fries

I had extra sweet potatoes left after thanksgiving, so I made these last night with turkey burgers. We didn't have taco seasoning, so I just used some Lawry's seasoned salt and pepper. They were great and our convection oven made them nice and crispy on the outside.

Out of this World Turkey Brine

Great turkey this Thanksgiving. Everyone raved about how moist and flavorful it was. I used this brine recipe and let it soak about 18 hrs. After rinsing I covered the skin with melted butter and stuffed the cavity with onions, celery, sage and thyme. Poured some white wine in the pan. I roasted in my convection oven at 325 for 10 minutes per pound, covering the breast with foil once it was browned. The turkey was perfect and the gravy was very flavorful as well.
