Seven-Up(TM) Sheet Cake
I made this cake it was very moist and fluffy. I had to tweak the topping I used 2.5 tsp of cornstarch, instead of flour, to thicken the pineapple topping, no eggs and only 3/4 c. of sugar. I added 1/4 c. butter and 4 oz of flaked cocounut - the topping came out great! I spread whipped cream on top, to make the cake more presentable. I would make again. My co-workers LOVED it and wanted the recipe.

Creamy Caramel Flan
I made this and was surprised how easy it was. I was afraid to melt the sugar..but surprisingly..if you 'swirl' the sugar (not stir) it melts evenly and nicely. I left my pan to warm in the oven until ready to add the melted sugar..simple..it hardened but it 'softened' once in the oven baking with the 'custard'. I used my 'outboard mini motor' so that I would not have too much cleanup -worked like a charm! Excellent and easy recipe -has people thinking you spent more time in the kitchen than you actually did! Used the exact recipe - no 'tweaking'.

Brown Sugar Meatloaf
I was pleasantly surprised by this recipe. I did not think the meatloaf would have much taste, due to the few ingredients -but it did. I do not use a meatloaf pan - I form my loaf on a rack on a foil covered baking sheet..the fat collects below and the meatloaf comes out perfect. Other than NOT using a meatloaf pan, I did not alter the recipe - it is very good. I have used this recipe twice, and will probably continue.
