Pumpkin Fudge
My family thought this recipe was very good. I was looking for a recipe to use up some leftover pumpkin, and came across this one. I was very pleased with how easy this recipe was. I didn't use a candy thermometer, but I was careful to follow the directions, especially for timing. Since it was Thanksgiving Eve and the food stores were packed, I opted to try mini marshmallows because I forgot the jarred kind. I estimated the same ounces and it worked perfectly. This fudge is not too sweet and somewhat reminiscent of a maple sugar candy. Very good--Thanks!

Overnight Caramel French Toast
This is very yummy and very easy. I love making it the night before because everyone can eat it at the same time. Its very sweet, and fyi, you can reheat it in the microwave for about 60 seconds if you have leftovers--its delish!

Pecan Pie V
I was very careful to follow directions on this and read the reviews as I have never eaten or made a pecan pie. I didn't try this one either, but can tell you that it looks like no other pecan pie I have seen. Made it to add to our Christmas dessert collection and some said it was very good. My grandmother on the other hand, offered me HER recipe. I'll probably just stick to apple pie in the future ;o)
