Carrot Cake III

This is my third time making this cake and my husband loves it. The worst part however is the shredding. Here are some hints on shredding that I had to learn the hard way. :) 1. Don't buy baby carrots...it will take forever and you are more likely to cut your fingers! P.S. 4 large carrots = 3 cups. 2. Try holding two large carrots at once while rubbing over your shredder. 3. If you have a heavy duty food processor you can cut the carrots into little chunks and then put it in the processor. Mine isn't quite strong enough to handle this! 4. If all else fails buy pre-shredded, but it might be a little dry. Happy shredding!

Buffalo Chicken Dip

My husband thought it was a five. I thought it was a four. So it's too bad I can't rate four and a half. I didn't use chicken because we didn't have any but it still tasted great on top of baked potato fries. Yummy. Will make again, for my hubby's sake.

Spicy Bean Salsa

Jay's Signature Pizza Crust

This is a great recipe. I've used it numerous times, making it for family and guests alike. Everyone raves! My Dad told me it was better than the pizza he had at a five star restaurant. I follow the recipe almost exactly; but I usually use 2 cups of white flour and 1 1/3 cup of wheat. Also, seeing as Olive Oil is expensive, I sometimes substitute vegetable or canola oil. You really can't taste any difference. This recipe is a five star for sure. :)

Dorm Room Chili Mac

Those living on a small budget and with limitied time have to appreciate this classic meal. My husband and I are both students and we make this all the time. I like to spice mine up with some chili powder, cumin, and cilantro flakes - all things I keep on hand in my spice drawer.

Quick and Easy Alfredo Sauce

This recipe was wonderful! I followed it almost exactly and it turned out creamy and delicious. Alfredo I can actually afford! My husband loved it and was coming up with idea after idea of how we could use it. Someday, when we're no longer poor students, I plan to substitute some of the butter for olive oil to make a healthier and lighter sauce. This ones a keeper!

Lebanese Garlic Sauce

I love garlic sauce! Growing up, my best friend was lebanese and her Dad got me hooked on it! This recipe is similar to his but not quite, and therefore not quite as good (in my opinion) I used less olive oil and instead of sticking it in the blender, I used a garlic press, makes things chunkier and more flavorful. Yumm! My sauce turned out perfect, but since I didn't follow the recipe perfectly I can't give it five stars :)

This was very good. I made it in the oven because I don't have a breadmaker, and I used 1 cup of wheat flour and 1 1/2 cups of white, it still turned out moist and yummy. If you like herbs in your bread then go for it, otherwise don't bother.

Thick-Style Lebanese Garlic Sauce

I'm not sure how to rate this. I love garlic sauce and I only used the given ingredients but my amounts were completely different. I used twice as much garlic and only olive oil to make the consistency similar to what I grew up with. I loved what I made but it wasn't the recipe here.

Ten Minute Enchilada Sauce

This recipe is exactly like the one I was raised on, except for one thing which I thinks makes a world of difference. substitute a can of chicken broth instead of the water and then thicken to desired consistency with corn starch. It's a hit every time. We use it on everything from enchilda's to scrambled eggs.

Peachy Moist Muffins

These muffins were very tasty and resembled peach cobbler, one of my favorites. However, they didn't come out of the muffin pan very easily. I ended up scooping them out into bowls. next time I make this I will put the batter into a casserole dish and treat it like a cake.

Snickerdoodles II

I made these for my Uncle as thanks when he fixed my bike, they were tasty and quick. I didn't use as much sugar as it called for but I think that actually made it taste better.I'm in school right now so I don't have a lot of dishes (only one baking pan) so I tried to cook some in my muffin tray. Learn from my mistake and don't try it, the ones from the muffin tray didn't cook evenly and had to be thrown out. Bummer!

Aggression ( Oatmeal ) Cookies

This recipe was great. I'm a college student so I don't have a lot of ingredients just laying around. I substituted apple sauce for half of the margarine to make it healthier and the consistency less "crumbly". I only cooked half of the dough and then froze the rest for another day. My friends loved it.
