Cucumber-Mango Salsa

Really refreshing. We tried it with tortilla chips and it was ok. We made chicken breast on the grill and then used the salsa as our hamburger condiment....YUMMY!

Slow Cooker Adobo Chicken

Reviewed: Jun. 3, 2009
Replace half the soy sauce with water so it is not so salty and add black pepper (2 tsp). I also followed another review wich said to use cider vinegar. Serve it over rice. YUMMY!

Tomatillo Salsa Verde

Reviewed: May 11, 2009
Yummy! I, too, did what Nina L suggested and blended all, adding chicken stock and blending all ingredients then cooking for 15 mins. SOOOOOO Yummy! I hated Mexican food but now trying authentic stuff, I am getting used to it!

Tomatillo Guacamole

Reviewed: May 3, 2009
Really good guacamole! Instead of red pepper flakes and hot sauce I used a seeded Jalapeno(a few seeds left in to add some heat). I added cilantro as I like the flavour, put it all in a blender. I will make this one over and over! Yummy:)

Korean BBQ Short Ribs (Gal-Bi)

Reviewed: Apr. 19, 2009
Yummy! I was afraid to use a crockpot but did try it....at about the 4 hour mark, I drained it all and added more sauce for about another hour or 2.(quite oily) It darkened up and was so tender, sometimes grilling can leave the meat a little tough. I also added onions and they caramelized with it. Next time I will add potato.

Yorkshire Pudding II

Reviewed: Dec. 15, 2008
These were good but I needed to turn the heat down a wee bit as these burned a little. I like the pan instead of the muffin.

Quick and Easy Yorkshire Pudding

This is good in a pinch but too "airy" for me. I like my yorkshire pudding a little more dense.

Cod with Italian Crumb Topping

Reviewed: Dec. 7, 2008
The only reason I gave it 4 stars was it needed a little more flavouring. (I used thick cod pieces)I will double the topping next time:) I, too, used the lemon mayo mix for the top and that was a great touch(more of that next time too.) Great recipe and my kids went back for seconds! Yummy!

Cajun Appetizer Meatballs

Reviewed: Oct. 17, 2008
Made these as it is written changed the cooking process. I browned the meatballs in a skillet, then baked for a bit. Meanwhile combining all sauce ingredients in a crock pot(cooked sauce for 2 hrs on low). Took out the meatballs from oven, put them in the sauce and left them in the crockpot. Everyone loved them!

I have used thin pork chops and chicken breast that I pounded thinner. I also added a bit of minced garlic to the honey sauce. Yummy recipe!

Chicken Wing Dip

This recipe was easy and, according to my husband, tasted better than good!!! I am not a buffalo wing lover so I am going by his taste. I used buttermilk ranch dressing and Franks redhot buffalo wing style sauce.
