Spicy Rice Pilaf

For someone on a 14 day detox this recipe was heavan!!! and the kids liked it! Even the one who doesn't eat beans ate it! I had to make my own salsa to add so as to avoid the sugar and other forbidden ingredients, just a cupe of diced tomatoes, cumin, lime juice, onions and green pepper. YUM YUM! I didn't use vegetable broth either, just water. But still fabulous!!

Salisbury Steak

Everyone loved it! I used an envelope of dried instant onion soup with only half it's needed water to make the condensed onion soup needed and it came out great! Served it with boiled potatoes and corn, total comfort food!

Hummus III

I'm so thankful for this recipe! I make it all the time now. My kids and husband love it! One time I realized that I was out of lemon juice and ended up squeezing a grapefruit for some citrus type juice, it came out fine!

Buckeyes I

Oh my god these are good. Made them for a cookie exchange and not many of them actually made it out of the house! It was hard to dip the last 10 or so because they had softened and slid off of the toothepick. Had to fish them out of the chocolate, certainly didn't ruin the taste. I would suggest using a tall skinny glass so that one can use more of the chocolate.

Perfect Baked Jerk Chicken

I made a whole bunch of this and froze them away before cooking. Defrost for two days in the fridge before cooking. Definitely came out better the first time when a hadn't overcooked it. Much saltier when overcooked. Loved it the first time though but very mild..kids could eat it. Husband was disapointed that it wasn't spicy.

Yummy Bok Choy Salad

I made this for a themed potluck and it was loved by everyone! So glad I have been introduced to Baby Bok Choy. The sauce was very generous, I might double the Bok choy next time...I wish there had been leftovers.
