About this Cook
I am 21 and currently live in Johannesburg South Africa. I moved here almost two years ago to marry my husband, Gerald. He is the love of my life and my tasting buddy! I love to cook and especially to bake. I am currently trying to get a baking company up and running so we will see how that goes! Some of that is thanks to all of the wonderful cooks on this website! Finding it was definitely God orchestrated!
My favorite things to cook
I love cooking Enchiladas, Italian food....all that good comfort food! Most of all I really like to bake. I have been baking almost since I could read! I love trying new recipes, but I also like my good faithful ones. I love to make a great salad...I like all the chopping...I think it's calming for me after a day of work.
My favorite family cooking traditions
My favorite family cooking traditions are all centered around Christmas. My mom taught me how to make our traditional Christmas meal when I was about 15. I did it all by myself that year because she was sick! She gave directions from the couch! I have four siblings...two of them sisters. We all used to bake and decorate sugar cookies and gingersnaps and yummy things like that. Those are my favorite cooking traditions. My mom is really the one who deserves all the glory for my cooking abilities. I couldn't have done it so well without her.
My cooking triumphs
My cooking triumphs have all happened since getting married. Whenever my husband loves on my dishes and tells me that I can make it again (like I need his permission!) It really makes me feel like I've accomplished something. Thankfully he doesn't compare me to his mom because she didn't cook really at all. But his gran did and apparently she was amazing. I must not do too bad because he hardly brings that fact up! He is a seriously picky eater! He loves my chicken enchiladas and would eat them every day if I would make them...the first time I made them was a triumph because he had never had them before and he loves them!
My cooking tragedies
The first time I ever made chocolate chips cookies I just went down the list of ingredients and threw them into the bowl one after the other. Little did I know that there is actually a method to this madness called baking! Fish is a tragedy for me. I hardly ever get it right. Possibly because I hate it!

Classic Bran Muffins
These are delicious! I will be making these again and again! I only substituted applesauce for the oil, and added a couple of tablespoons of flax seeds. Other than that it was the same! They are wonderful and I look forward to making them again! Oh and subbed cranberries for the raisins! Yummy!

Megan's Granola
This is the first time I have made granola. I will definitely do it again. I only gave four stars because I didn't think that the time in the oven was correct. The directions weren't very "stupid" friendly either ;o) Granola is one of the only things I have never made at home. It did turn out pretty well other than the one tray overcooking. Will try again soon! The only changes I made were to substitute wheat bran for the oat bran, I added 1/4 cup flax seeds, left out the brown sugar completely and put the cranberries instead of raisins. I am looking forward to trying it out properly in the morning.

Cream Cheese Frosting II
My husband really like this because it wans't too sweet. I wasn't really "Wowed" by it but it was good. It was very runny though and wasn't easy to use. Tasted good but I would probably add more sugar to help me to thicken or something. It was okay but not great.
