Chocolate Bourbon Pecan Pie
I've made this twice and the 2nd time I used 1 C DARK chocolate chips. EVeryone loved it. Also, it is critical to follow step 2 exactly. If the sugar is not completely melted you will get a gritty filling. Also might try using baker's sugar....finer and will melt faster. And this amount nicely filled a 9" crust.

Garlic Roasted Summer Squash
This is great. I used one zucchini and one yellow squash and tossed in a few nice quartered mushrooms for texture. With 5-7 minutes left on the roasting time I threw in a nice handful of grape tomatoes for color. Lovely presentation and delicious.

Candied Lemon Peel
This is a lot of work for small results! The flavor is wonderful BUT..a) it is labor intensive and b) no way this cooks for an hour. DO NOT leave the pan unattended! In less than 15 minutes I scorched a pot and smoked up the house and I'm not a novice! Rewind.... start over. This cooks in about 8 minutes. A veggie peeler works best....flat against the edge of a cutting board will get most of the pith off the peel. Finished product is sweet candy and a perfect garnish for a lemon dessert.
