My favorite things to cook
West African dishes, specifically Sierra Leone. I've been trying to recreate the rice & sauce dishes I eaten there. The sauce has either a tomato, bean (fava or lentil), or cassava/sweet potato leaf base. Lots of vegetables are added. Meat is optional, but added when available. The recipes I've gotten in Africa are vague and difficult to convert to our style of cooking, so it's been fun and delicious trying out different ingredients. My latest craze, one pot cooking, actually stems from my time in Sierra Leone where most meals are cooked this way.

Making lefse with my kids during the holidays. What a mess! What fun! I know that my kids will pass this one down.
My cooking tragedies
The Thanksgiving dinner where the turkey took twice as long to cook as I expected and everything else was done. Dinner was two hours late!

White Bean, Spinach, and Barley Stew
Not bad, not spectacular. This recipe is like an empty canvas, just waiting to be painted. there are so many ways to go. Italian - add oregano and sausage. Spanish - more tomatoes and chilies. Indian - potatoes, peas and curry. Definately use broth, not water. Use this beginning to create your own masterpiece!

Blueberry Breakfast Sauce
Just like everyone else says - it's quick, it's easy and it's yummy! I did use 2 T of corn starch for a cheesecake and it turned out perfect. Thanks for the recipe.

Italian White Bean And Pancetta Soup
Very good, though I didn't have any pancetta. That would have been even better.
