Banana-Chip Oat Muffins

Reviewed: Aug. 30, 2009
Pretty good as written. We scooped out a few muffins without chocolate chips and my husband thought they were bland. I didn't have any overripe bananas on hand, though, so the banana flavor was very mild. In the rest of the muffins as written the chocolate was almost overpowering. Overall the texture was great, the combination of flavors was good, and I love how deceptively healthy they are!

Chocolate Mousse Pie

So easy, so good, and the possibilities to alter it and change things up if you want to are endless. Thank you for a great recipe that doesn't contain raw eggs!

Busy Day Barbeque Brisket

Reviewed: Jan. 25, 2009
This was pretty fantastic. The only complaint I had was the barbecue sauce/worchestershire sauce mixture burned into the bottom of my crockpot. However, this was more of a cleaning issue than anything else. It didn't affect the flavor of the meat at all, and we didn't use it as a sauce. I fed 12 people (with the recipe adjusted for a 4 lb. cut of meat) and all of them thought it was awesome, as well. I couldn't ask for a more glowing review than that!

Maple Bacon Pancake

Reviewed: Jan. 1, 2009
My son has been asking for a "pancake with cheese" and the idea of just putting cheese on a pancake grossed me out, so I was glad to stumble on this recipe. We followed it as is, but I think next time I might try adding scrambled eggs to the topping so it's a complete breakfast.

Persimmon Cookies II

Reviewed: Dec. 31, 2008
I did 1/2 C. white sugar and 1/2 C. brown sugar in these, and other than that followed the recipe. I personally don't care for persimmon cookies, but they were intended as a gift and I was notified a few days later that they had been consumed by one person over two sittings, which to me means they were a success.

Maple Hot Chocolate

Reviewed: Dec. 31, 2008
This was so good! I added a heaping Tbsp. full of baking chocolate (because I'm like that), but other than that followed the recipe exactly. I loved the uncommon touch of maple flavor, it was just what I was looking for when I set out to find a hot chocolate recipe.

Aaahh! Potato Soup

Reviewed: Oct. 4, 2008
Good for a quick soup. The reheat was more like eating 'loaded' mashed potatoes, though. I added bacon as well, plus I used fat free half and half instead of cream.

Ham and Bean Soup

Reviewed: Oct. 4, 2008
Good, but not great. It is definitely one I will make again because it's easy to keep these ingredients on hand. However, I prefer the flavor of a soup you work on all day if I have the time and stuff to do it. Also, I like my soup fairly "brothy", so I might put one less can of beans in it next time.

Easy Peach Cobbler

Reviewed: Jul. 13, 2008
This recipe is amazing, with a few of the changes suggested. I melted the butter and drizzled it and I did cut the sugar, which was a smart thing to do. I have made this many times and will make it many more! (I didn't give it five stars only because these changes were needed).

Sunshine S'more Cupcakes

Reviewed: Jul. 13, 2008
These tasted great straight out of the oven, and at that point were worth the mess and fuss of the marshmallow creme that stuck to everything (even following some of the suggestions posted). However, once cooled and stored, they weren't that good and the flavors didn't blend together. The creme was an even bigger mess after they had been stored 24 hours. I probably won't make these again.

World's Best Lasagna

This is an awesome special occasion recipe! I don't cook something this time-consuming unless I want it to be special and this one didn't dissapoint! It was worth the time and hard work, and we will definitely make this again.

My Crab Cakes

Reviewed: Jul. 13, 2008
These turned out very good, especially following the aioli recipe given in the reviews. (Don't use Miracle Whip for that, though--make sure it's mayonnaise.) I also took some of the advice given and added two cans of crabmeat instead of just one, which turned out well. I wish we could get fresh crabmeat here, though, as the flavor was a little "fishy" for my tastes with the canned stuff. Overall, very good and simple!

Cajun Prime Rib

So good! We did this camping and in a Dutch Oven/on a grill and it was perfect. I'm usually not one for too spicy food, but the more cajun spice that was added, the better it tasted!

Deep Dish Brownies

Reviewed: May 6, 2008
These are just as easy as a mix and taste five times better. They are the perfect mix of cake-like, fudge-like, and have the perfect amount of chocolate. I was looking for this as a little smaller of a recipe (I was afraid I would eat the whole pan alone in just a couple of days- a fear that turned to reality!) and I wasn't disappointed! I make these every time I want brownies now, and if I'm really ambitious, I eat them out of the oven with vanilla ice cream.

Spinach Tomato Tortellini

The only difference on mine was I could only get a 20 oz. package of tortellini. Other than that, I followed it exactly. It was so yummy and easy!
