Broccoli Cheese Soup VI
I've made this several times. Double the cheese. Use fresh finely diced onion instead of dry flakes.

Angela's Awesome Enchiladas
I substituted the chicken for ground beef. Just didn't have any chicken in the house. Very good.

Slow-Cooker Chicken Tortilla Soup
If I could give this 7 stars I would. I did use frozen chicken breast, let cook with liquid ingredients, shredded and added rest. I also added 1/2 cup water with a T of cornstarch at the end. I like my tortilla soup a bit thickened though.
