About this Cook
I LOVE this website. I only wish I had found it sooner- my family probably does too. I can be a bit picky when it comes to food. When I spend a lot of time on a dish I really want it to be goooood. Not just kind of good. Does that make sense??? I am a pretty darn good cook, but I can mess up a kitchen like nobody's business!!! I am a mom of the two most fantastic children in the known universe and I love to cook for them and my husband. My sister claims I should be a chef, but who has the time???
My favorite things to cook
I like trying new things at least once/week, but my family insists on having meatloaf, spaghetti, and tacos at least once every two weeks. I LOVE baking would like to learn how to make more pastries.
My favorite family cooking traditions
Christmas cookie time is sooo much fun. We have our regular staples, but every year we make one or two new varieties just to mix it up a bit. I love when the weather starts getting cooler in the fall, because then I can start making all of my wintry dishes- soups, stews, roasts, etc.... I also get pretty excited in the spring as I love to grill. I make a mean garlic pepper shrimp on the gril, and my ribs are pretty awesome too!
My cooking triumphs
I'm constantly "tweaking" recipes or making up my own, like my basil cream chicken pasta or portabello stuffed chicken breast. So far so good...
My cooking tragedies
For whatever reason, I cannot make oatmeal raisin cookies without messing up the ingredients at least once. Plus, every time I make brownies the middle is undercooked and the edges are rock hard. I need to work on those!

Easy Apple Cinnamon Muffins
Very good recipe! I followed some of the suggestions and made 12 instead of the 6. Had a bunch of extra streusal topping, but that's okay. These were great!

Enchilada Sauce
The whole family liked this sauce. It did take quite a while to reduce to desired consistency, but in the end it was worth it. Only used a very small handful of choc. chips. Turned out great.

Pumpkin-Apple Muffins with Streusel Topping
I found this recipe 9 days ago and have since made it twice. I stayed true to the original recipe. DELICIOUS!!! Literally one of the best I've ever eaten and pretty simple to make. Thanks so much for this one!!
