Turkey Tortilla Soup
This soup was awesome! We are from the southwest and like the spicey, wife liked even more than I did, If that's possible. Can't wait to try this with other types of meat/spices.

Roast Beef Burritos
What a great way to use up leftover pot roast for a quick Mexican meal ! I left out the red peppers and taco sauce and used a can of hot green chili's and tomatoes instead.(including juices from the can) I then added a bit of water to the entire mix, boiled then simmered to reduce the water and some of the juices. Added shredded cheese and lettuce as toppings when done. These came out great and we will be having them again. Thank you.

Seafood Chowder
This was excellent chowder ! It rivals a chowder that I used to get at a local restaurant in Connecticut. The only thing I would change next time would be to leave the pepper and cayenne out. I am originally from the Southwest and love spicy food but this was a bit much in the chowder with all of the good seafood. We also added more crab meat in place of the calimari. All in all, we will surely make this again soon. Kudos to KerryLynn1 !
