Shrimp and Okra Gumbo

Great Gumbo taste without the roux - and the work that roux involves! Plus that meant that it turned out to have less sodium and calories :) Everyone enjoyed it.

Very nice - used the salt process mentioned by others to take away the bitterness of eggplant. :) Yum - even my 3.5 year old ate it.

Baked Fresh Cherry Pie

Made this with a little cornstarch instead of the tapioca - but otherwise true to the recipe - it was fantastic. My husband said this was the best pie I'd ever made.

Summertime Sweet Pickles

Great, easy pickles - I added a bit of celery seed and skipped a little of salt as recommended by others :) Yum - Great with a little sweet red pepper cut in rounds as well.

Sweet Russian Cabbage Soup

This was wonderful and froze very well. I threw in some leftover pork and some veggies I had in the fridge (green beans). My husband and mother were both impressed - and my husband doesn't normally eat cabbage!

Tuna Noodle Casserole from Scratch

My husband loved this and the recipe is very forgiving. I used fresh Basa that I fried in a pan before flaking and I substituted zucchini and yellow squash for the onion and celery. I left out the peas and the butter with the bread crumbs... Threw some italian seasoning in the milk as well. Tasted Great!

Okra Patties

Great way to use up a lot of Okra! My two-year-old even liked them with a little ketchup. I served them with a spicy french salad dressing and cajun-spiced oven-baked tilapia... yum!

Cool Whipped Frosting

I used this to make the icing for my son's train cake! the icing was so delicious and was less sugary than regular frosting. The kids loved it :) I also made some with chocolate flavoring (chocolate pudding and a little nestle syrup) for the darker colored train cars... yum!
