Mexican Shepherd's Pie

OMG! This was so yummy. I did change the recipe up a whole lot, but most of the ingredients stayed the same. First, I baked 2 boxes of cornbread mix in a 9x13 pan for 20 mins on 400 degrees. When that was done I started browning my onion and beef. After fully cooked I drained the grease, added the tomatoes, the corn, garlic salt (i didnt have powder and I omitted the salt and pepper all together) and the taco seasoning and let simmer. Then I spread a layer of warmed refried beans on top of the corn bread (there was not enough in one can, but too much in 2 cans, so I used about 1 and 1/2 cans). The beef mixture was done by now and I spread that on top of the beans. Awesome result!!! My oldest daughter added cheese and sour cream to the top. I just added sour cream and my husband ate it without adding anything else. We all loved it and will add to the rotation. I was going to try this again following the direction exactly, but this was so yummy I cant bring myself to changing the way I did it.

Mom's Zucchini Bread

This is a great zucchini bread recipe. The taste was wonderful, but mine was a little bit dry. I'm sure that is my fault. I did not have two loaf pans, so I decided to bake it in a 9x13 pan. It ended up more like a dry cake. Next time I will buy another loaf pan and follow baking directions. Oh, and I will add more zucchini too. I love zucchini! 7/11/08 update: the longer this sat, the more moist it was. Sounds weird, but today it is to die for.

Grandmother's Buttermilk Cornbread

I followed the directions as written and it turned out great! My husband thought it could be a little sweeter, but I thought it was perfect and sweet enough. It was so yummy and gone within minutes.

Best Brownies

Ok - I had the worst time with the frosting. I did exactly what the recipe said to do and it turned out nothing like frosting. It was as if it was only dry ingredients. I had to add 2 more tablespoons of butter to it before it became moist at all. Then it was so thick that it would not spread over the brownies, so I warmed it in the microwave for 30 seconds. I was able to spread it to some degree but next time I will not make the frosting. Made it too rich anyway. So rich my dad would not even eat them and he eats anything.

Chocolate Chip Cake

I did not have any sweet chocolate, but I made it anyway without it. It was very moist and yummy. My VERY picky 7 yr old daughter loved it. As did the rest of my family. Thanks!

Butter Cream Frosting II

My whole family loved this frosting. I have had a really hard time finding one that my husband likes, but this one can and will be used on every kind of cake in our home. Thanks! UPDATE: I made this frosting again today but added 1 cup of cocoa and 1/2 cup of milk (instead of what was called for in the original recipe). YUMMY! I prefer the butter cream verses the chocolate butter cream, but my daughters on the other hand choose the chocolate.

Chewy Noels

I made these today. So yummy, but mine ended up soft and chewy in the middle of the pan, but hard and crisp around the edges. I'll cut down baking time next time I make them and there will be a next time!

Restaurant-Style Hashbrown Casserole

This is how I made mine... I used 2 - 1 pound 4 oz pkg of refrigerated hash browns (found in the dairy department), 1/2 med. yellow onion chopped, dash of salt, few dashes of pepper, 1 can cream of celery soup, 1 - 8 oz container of sour cream (I used low fat)and 10 broken up pieces of cooked bacon. Mixed it all together in a bowl. I did NOT add any cheese at all to this mixture. Spread mixture in a 9 x 13 pan, added shredded cheese over top of half the mix (my hubby does not like cheese, so I have to keep it off of his. That's the reason for me not adding to the mix), Added a crushed corn flake topping by mixing flakes with 1/4 TBS of melted butter and sprinkling over top. Baked for 45 min's at 350. Yummy! Tasted just like a baked potato.

Pumpkin Dip

I made this for Thanksgiving yesterday and it was a big hit. I even served it in the mini pumpkin - so cute. I served with nilla wafers, graham cracker sticks and apples. Everyone preferred to eat with the apples. It was very yummy.

Caramel Apple Dip

I made this yesterday for Thanksgiving and only one person out of two families liked it. The only thing I did different was use Kraft caramel bits rather than caramel squares. My husband said it had a weird flavor. I thought it was because he doesn't like cream cheese (I didn't tell him it was in the recipe though), but my daughter who loves cream cheese said she didn't like it either. Glad I also made a yummy pumpkin dip. It was wiped out!

Stuffed French Toast II

I thought this was very yummy. I made it for my daughter this morning and she liked it all but the almond extract. Next time I think I will try vanilla and see how she likes that.
