About this Cook
My favorite things to cook
Things that are quick and easy to make with things I have on hand. I make casseroles and easy chicken recipes most often; things that are filling and can be reheated easily and still taste just as good as if I just pulled it out of the oven.
My cooking triumphs
Meatloaf, I don't eat beef or pork so cooking them for DH can be quite challenging for me because I don't eat them I have to rely on him to tell me if I did good or not!

Chocolate Fudge Cookies
I made these the other day and I thought that they were pretty good. A lot less mess than making traditional cookies. I actually used a regular chocolate cake mix and had to add in extra oil. I also used chocolate chunks which is not adviseable as the chunks fall out of the batter. But they tasted good and didn't make a gazillion cookies that we have for weeks!

Spicy Garlic Lime Chicken
It was too 'limey' and it tasted burnt and really sour to me even though it was not burnt. I will not make this again.

Quick and Easy Alfredo Sauce
I made this while the in-laws were here and I was not really sure if they would like it. They are more into southern style cooking, but it went over very well. It was delicious and easy to make with things that I had on hand. The cream cheese was great in it, I would never have thought to use it but it added real consistency to the sauce. Delicious. I will make this many more times I am sure. Great recipe!
