Rabbit with Mustard

Delicious! I had to cook the rabbit 2 hrs because I doubled the recipie. I served the thickened pan juices over angel hair pasta as in a previous post. I did not notice the wine at all, hardly, and I hate wine. This is a new favorite for my rabbit dishes. I bet the prep would work great in a slow cooker.

Chocolate Chip Cheese Ball

I have made this three times and it is so good! It impresses everyone who tastes it. I used chocolate graham crackers to dip with it but make sure everyone knows it's sweet as one of my freinds at the bar was eating it on tortilla chips. The way to roll the cheese into a ball can be made real easy by taking a large sheet of plastic wrap and putting into a salad bowl and then scraping the chocolate chip cheese mixture into it. wrap it carefully and set it into the bowl to firm up for the next hour. The 1/3 less fat Neufatel cheese is softer than philly cream cheese so the ball won't hold it's shape as well but you could always serve it in a plastic tupperware or something.

Beetnik Cake

Yum! I was worried about beety taste but I couldn't detect it in the finished cake! I frosted it with cream cheese frosting. It was very similar to carrot cake. I will add raisins and nuts next time:)

Lemon Cream Pasta with Chicken

delicious! I did the roux base like another "rater" with melting a stick of butter and stirring in a half cup of flour. When it thickened completely I added the chicken stock and seasoned with the garlic, salt, lemon juice and lemon pepper. whisked in the cream at the end and it thickened nicely without curdling. I even added a bit of spinach. poured it over the pasta and cooked chicken. yum!!

Pizza On The Grill I

This is definately a "practice makes perfect" recipie. The grill burnt the bottoms before the top cheese melted all the way. I did cook my toppings first and made four mini-pizzas instead of two mediums, cooked two at a time with hubbys help. the dough was excellent, made the bread machine make it and it did need about a half cup more water and it was still pretty stiff but you need that when working on a grill.

Slow Cooker Carolina BBQ

My husband is from south carolina. I suprised him one day when he came home from work and smelled that vinegar smell. He was all over this dinner, he said it brought back memories of old time mom and pop diners where they keep this on the back burner for a pork sandwich. I was dubious about the vinegar as I never used it much for cooking. Expect a strong vinegar scent to permeate the house, but it is quite tasty and even better the next day:)

River Omelets

This was awesome! It was aromatic in the oven, the tomatoes were not overcooked and I added a can of green chilies and left out the bacon and the olives as I had none. I have chickens too and this is a great way to cook eggs for dinner:)

Aunt Kaye's Rhubarb Dump Cake

Normally I like everything. But this was kind of a dissapointment because I was expecting a cake with a pie-like bottom, like an upside-down cake. This was more of a cobbler. But the kids loved it, the flavor was nice, just wasn't what I was expecting.

Fantastic! I used half sour cream and half plain yogurt to cut the fat down. I served this cold out of the fridge with sweetened heavy cream. My husband hates rhubarb. But he really liked this pie!

Fluffy French Toast

I soaked each bread slice before frying and it does take a longer time to cook all the way through but they puff up well. I also served with blueberry compote and whipped cream. Delicious!

Chocolate Chip Banana Bread I

I didn't change anything but I did use nonstick coating spray instead of shortning to coat my tube pan, and I should have used the shorting. But the cake turned out D-LISH, even if a few chunks stuck to the pan.
