Easy Chicken Satay
About this Cook
I work 9 to 6... sometimes later and I have recently taken up cooking. The more I do it, the more I fall in love with it. On the weekends I love to spend time cooking elaborate meals, but on the weekdays I often need quick recipes that taste amazing. I grew up baking with my mom, and although I dont get to bake very often, I am still passionate about it.
My favorite things to cook
Italian food... I am a garlic lover! And I like experimenting with new meats and fish. I love baking cookies too!
My favorite family cooking traditions
Holiday cooking/baking is my favorite pastime. We made a tradition of being in the kitchen baking something for every holiday and I look forward to it every year.

Banana Nut Bread I
This bread was incredibly moist. I followed the recipe to a T, except that I used homemade buttermilk and butter for shortening because I didnt have any. I baked it for 50 minutes and any longer would've burnt the outside... but it was cooked to perfection. Next time I make this, I will add cinnamon and maybe a little nutmeg because I thought it was lacking in flavor a little. Overall, however, it was a great recipe that I plan to use again.

Pollo Fajitas
This recipe was amazing. My boyfriend and I were full, but then had to go back to get one more! I made it with chicken and thin-sliced tri-tip and added the lemon juice and a little vegetable oil to the marinade. We used red and green bell peppers. The meat was so flavorful and the veggies really absorbed the flavor while cooking. All we topped it with was a hot southwest style salsa and it didn't need anything else!

Asian Beef with Snow Peas
My boyfriend and I both loved it! We didn't have rice wine so had to do without. We also added water chestnuts, red bell peppers and baby corn. Without the extra veggies it would've been bland. We served it over brown rice and made even better leftovers.
