Banana Banana Bread

Amazing! Probably the best banana bread I've ever had- so it makes me extra happy that I made it! I used 4 good sized bananas, and baked it in a greased pie plate (no bread pan in the apt). Added a couple dashes of cinnamon. Added 1 tsp vanilla. When using a pie plate, bake for appx 40 minutes. Watch it carefully because it dries out quickly after the 30 min mark. Remarkable taste- my husband cannot leave it alone!

Chuck's Favorite Mac and Cheese

I made this for a family member, and sent the batch over to them. They loved it, raved about it, and told others about it- so it must have been pretty good! I made a low-fat batch for my home, and it was excellent as well. Great recipe!

Beef Taco Skillet

This is pretty good with a couple of changes. As others already offered, adding the tortillas in makes them soggy, so I would either have them on the side to put the filling in, or use chips to scoop them up. Also, I would add a packet of taco seasoning. Last, you could try to use a soup with a little more zip. This is would a great offering to munch down while watching a football game!

Baked French Fries I

Amazing! Who knew fries could be this great? We followed this recipe closely and it turned out wonderfully. It's a household staple now. A tip, you can make potato coins by cutting them into slices. The thinner, the crispier. Also, add extra spices by sprinkling them over the potatoes before they go into the oven. Turn them once during baking. That's it!

D's Famous Salsa

This is a really great base for a salsa. It's really very similar to a fabulous salsa we get at local restaurant that I have been trying to copy. I've made it three times now, and each time, I seem to get different results. I usually add a little more garlic, a little more onion, and much more cilantro!

Best Marinara Sauce Yet

Very tasty, easy sauce. Made with Fast and Friendly Meatballs. I added some extra garlic to this, but otherwise stayed pretty close to the recipe.

Fast and Friendly Meatballs

Really good meatballs, and healthier than most. Quick and easy. I followed the recipe for the most part. Only changes were adding some seasoning- oregano, garlic powder, onion powder, salt, pepper, parmesan. Make a nice difference!

Apple Crisp III

Wonderful, traditional apple crisp. Use an apple that is a bit tart, like a granny smith. I followed the recipe for the most part- the only real changes were that I added more sugar than called for, and used 1/2 brown sugar as others recommended. This is an excellent dessert- vanilla ice cream in a must have.

Crustless Cranberry Pie

This was unbelievably good, even though I changed the recipe significantly. I live in a country where cranberries are not readily available, so instead, I used a frozen berry mix with cherries, strawberries, raspberries, and currants. It was wonderful! Nice sweetness, but the currants balanced it out nicely. Like other reviewers- I added slivered almonds and a strudel topping. The strudel topping was the one listed by another rater (1/3 c. br. sugar, 2 tbl butter and flour). The strudel worked wonderfully- really made it work. I would add it again every time. I also made a change in using vanilla extract, as it was all I could find, but it worked nicely. Added a little cinnamon to the batter too. The pie needed baking for 10-15 minutes more than the recipe called for. With vanilla ice cream this is a real treat!

Corned Beef Bagel Dip

This is an ok dip that got better with some tweaking. I added 1/2 tsp of garlic powder, pepper, and onion powder. The real key, though, was adding dill weed- appx 1 tbl. I still feel like something was off though- it was a bit too sweet. Still it was pretty good and our guests enjoyed it.

Delicious Ham and Potato Soup

I'd give it a ten if I could- this was fantastic! This was the best soup I've probably ever made. Will definitely move into the regular rotation. I followed to recipe on this one and, it was phenomenal. My family could not stop eating!

Colleen's Slow Cooker Jambalaya

This was excellent and easy. I omitted the peppers, but otherwise followed the recipe. I put the sausage and chicken in frozen, and they still came out cooked and tender. Be sure to have a good rice on hand to eat this over.

Cabbage Fat-Burning Soup

This wasn't the most delicious thing in t he world, but considering how few calories it had, it was great. It did what I wanted it to do. My husband, however, couldn't get past how much cabbage was in it to eat it. I added a number of spices to zing it up, like garlic powder, pepper, italian seasoning, cubed garlic, onion salt.

Monday Night Hot Wing Dip

Excellent! Everyone loved this! I followed the recipe mostly, using low fat ingredients where possible. I also used Frank's red hot for the hot sauce. Then I used pre-cooked diced chicken to make it easier. Heat in the microwave and then put into a crock pot- delicious!
