Cousin David's Slow Cooker Brisket
Seriously, surprisingly good for something so simple! I've even tried this w/ a basic cut of roast & it was still fantastic. I only rated it 4 stars on account of the sodium content & use of pre-packaged ingredients, but I have to tell everyone: the cold leftovers on a sandwich the next day are almost even better!

Mexican Casserole
I've been making variations of this recipe, on my own, for years. The only thing that attracted me to this version was the casserole idea... and, I have to say- that was the worst part. My advice: shred the chicken, skip the casserole dish altogether, serve it w/ warm tortillas & fresh lettuce and call it some kind of taco. The filling is good, but the baking is unnecessary & unflattering.

Crab Quiche
Great tasting and easy! I added Old Bay Seasoning, used real lump crab and extra green onions. Personally, I found the crab just a little overwhelming and thought it needed more eggs but my husband (who's from Maryland) LOVED it! Excellent recipe for beginning quiche makers!
