Baked Cherry Tomatoes with Garlic
So nice and easy~ adorable as is or for a side dish I use roma tomatoes cut in half and de-seed rub outside with olive oil then add to the middle salt, minced garlic and a spoon full of cottage cheese with salt added to it and bake, then top with fresh basil when it is done.It is easy to use up extra garden tomatoes with this recipe even tomato haters love it

Quinoa and Black Beans
Defiantly added to my vegetarian surviving happy list! I make it with 1 can corn at the end and 1 can beans, also some med hot chunky salsa at the same time as the vegetable broth. serve with sour cream~so good even my big hungry meat eating hubby loves it. (I make it in a big deep sided frying pan like you would use for making Mexican rice and i saute onion garlic and quinoa all together then put spices on,mix then add broth)freezes good too! THANK YOU
