Vegan Split Pea Soup I
This soup was a hit in my family although I did some altering. I omitted the Potatoes and put all the veggies in with the onions to fry. I also soaked the split peas for 4hrs which cut the cooking time down by half. I did use chicken broth (homemade is best) and I added sausages about 2 bratwurst chopped in small pieces). I added extra water so that it wasn't too thick. The barley adds really nice texture to the soup, I don't recommend omitting. I love this recipe, it's definitely going in my favourites!

Banana Nut Bread I
This recipe is awesome with just enough banana flavour! I did add about 1/2tsp of cinnamon and it turned out perfectly. I baked the bread in one Pampered Chef bread loaf stone (which is quite large), it cooked over the edges a bit and I had to leave it in for an extra 35 mins but no burning and it stayed nice and moist. Great recipe, I'm replacing my old one and I've saved this one to my favourites.

Abby's Super Zucchini Loaf
This is an awesome loaf...I did do some substitutions b/c I was low on ingredients. I replace the raisins for chopped up prunes, I did half/half walnuts/pecans, and I did half/half all purpose flour and WW flour (the sub is 1C all purpose to 1/2C WW flour)...turned out awesome, it'll go in my fav's! The outside of the loaf is a little crunchy while the inside is super moist, my 3yr old loves it!
