Pumpkin Sheet Cake

Very good cake. I used 1-1/2 times the recipe to make two 9 x 13 cakes. I also added a little ground cloves and ginger for extra spice flavor. Easy to make and delicious.

Fluffy Whole Wheat Biscuits

These biscuits turned out perfect--definitely fluffy, light, and delicious. They were very easy to make as well. I used all white flour because that's what I had. And I made them as drop biscuits to save time. I will make these again.

Beef Stew VI

Very good, easy beef stew. I added about 1/4 c. red wine vinegar which brightened the flavor. And I added a little bit of thyme. I served it with homemade drop biscuits. Delicious! My husband, friend, and friend's 1-year old all loved it.

Crispy Rosemary Chicken and Fries

Very good, easy recipe. I made 8 chicken thighs on one baking sheet and 6 large potatoes on another sheet. I used 1/4 cup oil on the fries and skipped the oil on the chicken, since it had plenty of fat from the skin. I basted the chicken during the last 15 minutes with the juices. It was delicious and made the house smell great, and I only used dried rosemary. I think I'll try fresh next time.

Pumpkin Cream Cheese Muffins

These are good but I think they would be better with more spices. I would like to try adding ginger, cloves, and nutmeg to the pumpkin batter. This recipe made 24 muffins when I made it. I wasn't able to keep the cream cheese filling from touching the sides because it was somewhat runny, I think from the egg. But they turned out fine anyway. I left the nuts out of the topping because I didn't have any. It was good without, but I'm sure they'd made a nice addition.

Pepperoni Bread

I made this using the Tasty White Bread recipe from this site. It turned out great. I used the powdered Parmesan from the canister and skipped the egg. It was still very good. I would recommend using homemade dough, as it is cheaper and easier to work with than frozen dough. The Tasty White Bread recipe is very easy to make and rolled out well. If you use fast-rising yeast it's also pretty quick.

Tasty White Bread

This bread turned out great and the dough was so easy to work with. I made the Pepperoni Bread recipe using this instead of frozen white bread dough, which is more expensive and harder to work with. This dough was soft, pliable, and didn't stick at all. It baked evenly and went well with the pepperoni and cheese filling.

Mmm-Mmm Better Brownies

These were good and pretty much the same as "Best Brownies" on this site, which is my usual stand-by. The butter does provide a much richer flavor. The texture is chewey without being too cakey or fudgy. If you're looking for cake-like or fudgy this isn't your recipe. I will probably make these again.

Easy Elegant Skillet Chicken Supreme

This is a good basic recipe but it definitely needs more flavor. I added 1 clove garlic, half an onion sliced, and some freshly ground black pepper and it was still a little bland. The subtle taste of the wine and mushrooms is good but I think I will use more salt, pepper, onion, and garlic to season it next time.

Apple Cinnamon Oatmeal Bread

Delicious, easy and economical. I love that there is so little butter/oil in the recipe. And it is a creative way to use instant oatmeal. I put 2 packets in the batter and skipped the one on top because if my husband saw oatmeal on it he might think it was "healthy" and be put off. But it turned out great with that slight change.

This recipe is good but needs a little tweaking. It had a noticeable baking soda taste, so I will try halving that next time. It seems to have enough baking agents. Otherwise this makes a tasty loaf.

Quick and Easy Brownies

Good chewy brownie, not too cake-like and not dry at all. I also reduced the flour to 1 c. and added an extra 2 Tb cocoa powder--more chocolate can never hurt! And I halfed the salt, as I do in most recipes. Try this recipe if you want a brownie that is somewhere between cake-like and fudgy.

Fiery Pork Skewers

I added green peppers and cherry tomatoes (from our garden!) to the skewers. My husband really liked this pork. I would give it five stars but it's not "fiery" enough. It wasn't really spicy at all. I will add more crushed red pepper next time, perhaps during grilling as well as in the marinade. I would recommend doubling the marinade for vegetables to add to the skewers.

Crab and Swiss Quiche

Very good, easy quiche. I added green onions and cracked black pepper. I substituted cottage cheese for the mayo (which I don't like), and used 4 eggs and no milk. It turned out delicious, filling, and not runny at all.

Easy Pie Crust

This was easy, delicious, and flaky. I cut the salt in half as recommended. It crumbles before it is cool, but after a few minutes out of the oven it is ready to go. I didn't believe it would be so easy and good but it is!

Creamy Au Gratin Potatoes

This recipe is great. It is so easy and delicious. I can whip it up about ten minutes and then bake it whenever. I guess my husband doesn't like the onions, though, so I need to remember to start leaving those out.

Baked Honey Nut Chicken

This was good but not outstanding. It wasn't overly sweet. I marinated the chicken breasts in honey for a couple hours. This made the honey get runny from the chicken juices. My husband was reminded of peanut brittle. It was something different but I probably won't make again.

Yum--delicious! The topping created a perfect streusel layer that stuck on well. I used butter instead of shortening because that's what I had. It also took me 10 minutes longer to bake.

Grilled Ginger-Peanut Pork Tenderloin

I totally forgot the curry powder by accident but the marinate still gave it great flavor. I marinated a short but very thick pork loin overnight. Then I tried to grill it as directed. It burned immediately but started going better after I turned the heat to low. After 15 minutes it was still very raw inside so I sliced it "steaks" and grilled them like chicken breast. I was worried they wouldn't have enough flavor but they still turned out delicious, even with all the charring from the grill. I think a lot of the problem was the size of my pork loin, but I would not recommend grilling any meat on high.
