Dijon-Tarragon Cream Chicken

Reviewed: May 27, 2009
This was soooo good. I think I'm in love! I breaded the breasts in seasoned flour and added garlic and onion and a bit of white wine to the sauce. Served it with mashed potatoes and a salad. I will definately be making it again. Might add mushrooms like some of the reviewers.

Creamy Potato Pork Chop Bake

Reviewed: Feb. 9, 2009
This dish was so delicious. My whole family loved it. Like other reviewers, I seasoned the chops with pepper and seasoned salt before browning them. I then used a 32 oz. bag of "Southern-style" (cubed) hashbrowns, 2 cans cream of mushroom soup, 1 cup sour cream, 1 cup milk and 1 1/2 cups cheddar cheese and seasoned with seasoned salt, pepper and garlic powder. Cooked for about 45 minutes, then topped with onion pieces and 1/2 cup cheese. Came out nice and creamy without being overly runny. This is great comfort food and will probably show up an our menu often.

Grilled Bruschetta Chicken

Reviewed: Jan. 30, 2009
This was a very flavorful and fresh dish. I marinated the chicken breasts for a few hours and then grilled them on my "George Foreman" grill. Then broiled in the oven until the cheese melted. Be sure to use really good tomatoes, since that is where a lot of the flavor will be coming from.

Slow Cooker Mashed Potatoes

Reviewed: Jan. 30, 2009
These are sooo good. I used russet poatatoes in place of the red (I've found that they make beeter mashed potatoes) and homemade chevre (goat) cheese in place of the cream cheese. I also like to add fresh chives. It was wonderful to take to a church potluck because I could plug it in and it stayed good and hot until we were ready to eat.

Different Chicken Cordon Bleu

This was really good and an easy way to make Chicken Cordon Bleu. The only change I made was to use white grape juice in place of the wine. Simple and delicious!

Sausage and Potato Breakfast Skillet

Easy way to have breakfast for dinner. I diced real potatoes in place of the frozen and baked it covered in the oven at 375 for about an hour. Came out all cheesy and delicious. My mom especially liked it.

My sister and I both love this recipe. Up the honey if you want a sweeter bread. I like to make 6 strand braids for my loaves which we sometimes take to our home fellowship as part of the communion. My sister also made a braided wreath for Rosh Hashana. Simple and beautiful. Makes everyone think that you're an expert baker!

Not an amazing recipe but still good. The lime taste was a bit overwhelming, so I will probably cut back on the amount of juice next time.

Hawaii Chicken

Very good except it was WAY too salty. Definately cut back on the salt. Also, I doubled the sauce and it still didn't leave much to put over our rice. Might triple it next time.

Angel Chicken Pasta

The taste took some getting used to, but all in all it was a good dish. I replaced the wine with white grape juice, cut the chicken breasts in cubes and cooked it in the crockpot. Very easy and filling.

Best Football Dip Ever

Reviewed: Jan. 30, 2009
This was a very yummy dip. I replaced the cream cheese with my family's homemade chevre (goat) cheese and used cheddar instead of the cheese food. I also added some chopped onion and 1 pkg. of taco seasoning to the browned beef. Great for all kinds of parties.

Wine Jelly

This was a great recipe. I didn't change the recipe at all and made 1 batch of cabernet sauvignon and 1 batch of white zinfandel (which came out a beautiful pink). I gave them as Christmas presents to my co-workers and they loved them. A lady in my office even used it as part of her glaze for meatballs. Thanks for a wonderful and elegant recipe!

Southern Peach Cobbler

This was delicious, however I think that there was way too much cinnamon/sugar topping. I might cut back on that next time as it was a bit too sweet for me. Other than that it was great. Serve hot with vanilla ice cream.

Chicken Enchiladas II

Reviewed: Aug. 25, 2008
I give it 4 1/2 stars. It was a pretty simple recipe that my whole family loved. I cut up a whole chicken, rubbed with taco seasoning, baked with a bit of chicken broth at 350 degrees for 1 hour and shredded it. This gave it more flavor than plain chicken would have had. The only other change was to use cream of chicken soup instead of cream of mushroom. Served with corn and a salad. It's still not overwhelming in the flavor department, but it is very satisfying. There were barely any leftovers.

Fried Chicken with Creamy Gravy

Reviewed: Aug. 4, 2008
Southern comfort food at its best! I have had a lot of fried chicken in my life, but this is some of the best. The seasoning was perfect, the skin was crispy without being overly greasy and the meat was nice and juicy. I have never served gravy with my fried chicken before, but I probably will from now on. Though I wasn't quite sure about it at first, I thought that this gravy was very good and paired perfectly with the chicken. Only change was to use chicken bullion/water in place of chicken broth. Served with white rice and Daddy's Fried Corn and Onions from this site. This dish was sooo delicious and I can't wait to make it again.

Daddy's Fried Corn and Onions

A great way to cook corn. I used frozen sweet corn and added bell pepper and a dash of seasoned salt. It had a very good flavor and was a nice change from plain, boiled corn. Served as a side to Fried Chicken with Creamy Gravy from this site and white rice.

Strawberries with Balsamic Vinegar

Reviewed: May 27, 2008
These were really good. The sugar/vinegar/pepper combination gave the berries a sweetness with a slight tang. They were perfect over vanilla ice cream. Personally, I would have liked to taste a little more of the vinegar, but the rest of my family enjoyed it the way it was. Great way to serve this delicious fruit.
