Pan-Poached Alaskan Salmon Piccata
i made this for my boyfriend's family - everyone loved it. I also used the white wine - and it was wonderful! Be careful with how long you poach your fish - pay attention to it! If you take it out too soon and you'll have a raw center, or if you take it out too late and it'll be falling appart on you. I served it with pasta & garnished with a dolop of sourcream. tasty stuff!

Homemade Black Bean Veggie Burgers
Absolutely Incredible! I love my meat... but lets face it, black beans are cheaper and healthier! I doubled this recipie and made a few changes. I took pevious reviewers advice and squeezed the excess water out of my Red Bell Peppers. Changes:I added 1 tsp of Onion Powder (instead of fresh onions), about 1/2 cup of powdered parmesan cheese, and 1/2 cup of drained canned corn. Even though the doubled recipe called for two eggs, I only put one in - two eggs would have made the bean mash too runny. I will definetly be making this one again. Lots of flavor and great texture! I didn't miss my 1/2 lb beef burger at all!
