Sunday Best Fruit Salad

Served at a summer BBQ but just getting around to rating it now. This was well received, but I prefer a fresher fruit salad. I could not find peach filling so I substituted with apple filling.

Apple Pecan Cornbread Dressing

This is so yummy. Served for Thanksgiving. I used a pan of cornbread from my grocer's bakery and then followed recipe as is. Super delicious! I was going to make the Vegetarian Link Gravy from this site to go with it but ran short on time, so I popped open a can of mushroom gravy. I love it best with gravy.

Shredded Brussels Sprouts

I gave 5 stars because if I had used bacon I know it would have been out of this world. I am a vegetarian though, so I omitted the bacon. It was good for a regular dinner but no wow factor (I served for Thanksgiving).

Praline Sweet Potatoes

This is very rich. I served for Thanksgiving. It is delicious but next time I will cut the topping in half as it is quite thick and takes away from the sweet potatoes as the main ingredient.

Vegetarian Kale Soup

Whoa! Crazy amount of salt because of the boullion cubes. Next time I will use regular cartons of veggie broth. Aside from that, wonderfully hardy and delicious soup! Makes a ton, I froze half, hopefully it wil reheat well.

Roasted Beets with Feta

Yummy! I used two small bunches of beets from my co-op and they were so delicious. I never ate beets before, I wonder if supermarket beets would be just as good or if they were so delightful because they were picked a couple days ago. Either way, this is so tasty and my mom said "I would serve this to company".

Spinach Brownies

Used a little less butter as recommended and they came out great! Everyone at the party loved them. They are nice and firm and would probably travel really well. Added after second time: used the full amount of butter- man there was wayyyy too much butter. Will definitely use less as in the first time making them. Also- I was running late and put them out before they cooled enough. They don't taste the same piping hot. Take care in planning enough time to have them at room temp.

Peanut Butter and Pumpkin Dog Treats

Easy to make. I used owl, bat, leaf, and pumpkin cookie cutters and they came out so cute. My dog seems to enjoy them quite a bit!

Pesto Polenta Lasagna

I am a vegetarian and this was my first time using polenta at home! Duh! Although it didn't say to in the recipe, I lightly browned the polenta slices in a skillet before assembling the lasagna. I used an 8X8 dish. This only made 4 servings. I have enough pesto left and 1/2 a bag of the mozzerella, so I will buy another tube of polenta and make it again next week. You could also probably get away with using only 1/2 a jar of sauce and then you'd have all the ingredients for the second half on hand. This was really yummy the day of and reheated and was easy to make.

Pumpkin Oatmeal

I think I did something wrong. I did not have cinn sugar, so I did 1/2 tsp sugar and 1/2 tsp cinn. Otherwise followed exactly. Its pretty good but it looks very unappealing. But I am 24 weeks pregnant, so maybe it's just me.

The Best Lemon Bars

Mmmmm. I just made these and it's hard not to eat them all up. I used the juice of 3 lemons (1/2 cup) and I also used an 8X8 pan (increased baking time slightly). Everything else was as written. Very easy. I cut mine into 1 inch squares and since I used the 8X8 pan they are nice thick little lemony bites. It's for a working lunch and I don't want to make people fat, just brighten their day with a bite of lemon!

Salsa Pasta Salad

I wound up veering from the recipe quite a bit. I accidentally forgot the cilantro, I didn't have enough lemon juice, so i had to add more oil to counter the vinegar. I only used 1 tsp of chili powder and sugar and I used 3 cups uncooked pasta, red onion and cherry tomatoes. STILL, this came out awesome! So goodI was sad when it was gone. I think next time I will try the whole box of pasta. Thanks for the recipe because I never would have used white vinegar and chili powder in a pasta salad on my own.

Creamy Broccoli Casserole

This was pretty good. I also added 1/4 tsp black pepper, DEFINITELY NEEDED IT! I only put crackers on top and used less cream cheese and it was enough. I thawed my frozen broccoli and did not steam it. I just added it to the mix and it cooked fine in the oven.

Southern Potato Salad

Oh man, this is soooo good warm or cold. I used yukon golds, only 2 eggs (all I had ready), and scallions instead of celery. I added the 1 tbsp each of cider v and sugar. this is sweet but yummy. My husband ate a whole serving straight out of the prep bowl!

As others suggested, I squeezed out excess water from squash. I used 1 green and 1 yellow squash, added some garlic, used some cilantro that I had. These were yummy!

Broccoli and Ramen Noodle Salad

My husband loved this. I used regular coleslaw mix because that's all my market had that day, and pecans instead of peanuts as that's what I had on hand. I loved the dressing. Next time I think that I will omit nuts totally.
