Baking is a lot of fun, and I love the rewarding feeling of trying out a new complicated recipe and having it turn out great! Since living here in the almost-south, I've gotten into casseroles more too.

Italian Nachos Restaurant-Style
I have a similar recipe I use for Old Chicago's style Italian nachos. Here are my alterations: I make my own chips by cutting up pita bread into nacho sized triangles and lightly toasting them. Regular tortilla chips are a bit too salty with the salt from the meats. I also serve the marinara sauce on the side for dipping, and seed and slice the pepperoncinis before adding them. If you love cheese (and who doesn't?) you can grate some parmesan over it too once it's done baking.

Ramen Cabbage Salad
I hate to lower the score for this recipe, but I just didn't care for it. My husband liked it though after dousing it with Italian dressing. To me it was just too plain tasting, and it was too sweet. I only did 2 tbsp. sugar hoping that it wouldn't be that sweet but it was still too much for my taste. I also used toasted pine nuts instead of sunflower seeds, toasted the ramen, and added green onion. This still is missing something though.

German-Style Pickled Eggs
This was a little different than I expected. The eggs were sweet like bread and butter pickles. I would have liked this much better if it wasn't so sweet, plus it's a lot of work!
