Mediterranean Orzo Spinach Salad
forget the spinach. if no scallions, brown regular onions while browning the lamb. after mixing everything together, bake for 25 minutes.

Creamy Broccoli Casserole
make with frozen mixed vegies: broccoli, cauliflower,carrots. excellent.

Pumpkin Soup
good, but not worth the trouble. easier to just make all in the pot on the stove and tastes just as good. don't put roasted pumpkin seeds on top. hard to eat with the soup.
