Whenever I have a stressful day I come home and cook. It helps me unwind until it's time for clean-up.

I normally put things together from what I have in the cabinet and it's usually something Italian because that's what I grew up on.

My mom always laughs at me because she makes a sauce for hours and I can put together an entire "Sunday meal" in less than an hour and it's just as good.

My cooking tragedies
I was about 10 I made my brother a cake. I tried to get creative and used lemon icing and topped with maraschino cherries. The cherries in the juice melted down the icing and it was a big old mess. Almost 20 years later I STILL hear about this cake from my family.

Easy Roasted Pork
AMAZING! The perfect combo of pork chops & applesauce. Don't let the brown sugar scare you into thinking this is too sweet because you can monitor how much glaze you put on each slice after you cut into the loin. I'm eating my leftovers in a sandwich right now - yum! (and not dry at all)

Spinach Chicken Parmesan
I doubled the recipe for three people because I wanted leftovers for lunch but everyone loved it so much that I don't have anything left today. I added garlic to the spinach mixture like other reviews suggested and instead of skim milk I used plain soymilk - other than that I followed the recipe exactly and it was amazing!!!

Zucchini Pie
I remember a similar zucchini pie that my mom made growing up. I made this version and it was just too oily and it was just missing something.. SO here's what I do to make it much better - I add over a cup each of sharp cheddar cheese and parmesan. And instead of all of that oil I just add 2 tablespoons of olive oil...better flavor. Lastly, fresh parsley. Enjoy! It really is a good recipe if you do it right.
