Pumpkin Pancakes
I almost didn't try this recipe after reading all the reviews about the batter not cooking, etc. Glad I decided to try it.
I mixed the batter in my Kitchen Aid and had no problem with the consistency. Once the batter was in the pan, just a little shake evened it out. NOTE: You need to cook this batter over a medium-low heat. Pancakes turned out perfect and even my kids loved them. Mmmmmmmm :)
