Potato Bacon Chowder

This is SO good. I had a huge bag of bacon bits so I used those instead of frying up bacon. When I sauteed my celery & onion I used olive oil. But, those are the only changes I made, it is so yummy!

Zucchini Soup II

This was absolutely delicious! I didn't follow the recipe exactly. Instead of 1/2 a cup of margarine I sauteed the veggies in olive oil and added a little black pepper and garlic powder. I also used a low fat/low sodium soup and 2% milk. It was still rich and delicious!

Lemon Chiffon Cake

The only change I made was to double the amount of lemon zest and add a little yellow food coloring because I wanted a very Lemony cake in taste and look. This was one of the moistest, silkiest cakes I've ever had. I frosted it with a strawberry cream cheese frosting and it was to die for!

Easy Raspberry Chicken with Coconut Rice

This is SO good. The only suggestion I would make is to cut the water down from 2 cups to 1 cup when cooking the rice. Since a can of coconut milk is used I think 2 cups of water is too much as it causes the rice to be over cooked.

This was ok, I think the recipe calls for way too much oil. I thought it would end up kind of crunchy but it was just really soggy and oily. The flavor was good though.

Brown Rice and Black Bean Casserole

This was absolutely delicious! I used Colby Jack instead of Swiss and increased all my vegetables except the beans. I also used a little yellow summer squash with the zucchini. I didn't have add the chicken since I didn't have any and it was still yummy. This would make an excellent veggie burrito filling!

Fiery Fish Tacos with Crunchy Corn Salsa
