No Bake Chocolate Oat Bars

Very quick, easy dessert. I doubled the recipe to make a 9x13 pan, & took the tips of using 1/2 c. less butter. I'm glad I did b/c the crust would have been far too greasy with more butter. I also made a thicker crust so only 1/3 of the oat mix went on top. Just thought it looked prettier to seem some of the chocolate.

Lemon Macaroon Tartlets

Absolutely great when using Margaret's lemon curd recipe from this site, & fresh whipped cream on top. I took them to a bbq & they were gone before we had even started grilling! Next time I make them though, I will probably use a little less coconut & a little more flour as the crust was slightly more chewy then I wanted it.

Lemon Curd

Absolutely delicious, especially if you love lemon! I used it as a filling for the lemon macaroon tartlets that I took to a bbq. They were gone before we even started eating dinner! The microwave technique sounded like a good idea, but didn't work for me. I just cooked it in a bowl over a pot of simmer water & it turned out perfect.

Ambrosia Salad

Good with these modifications: I took the tip that said to mix 1/2 sour cream with 1/2 cool whip (also added 1 tsp of vanilla to that mixture). I also doubled the recipe. I added chopped bananas, chopped maraschino cherries, & strawberries & chilled for several hours before serving. It served a group of 12 for Easter lunch. Everyone loved it!

Jo's Rosemary Bread

Delicious bread! I used the tip that suggested using milk instead of the water, also used slightly less than a tablespoon of rosemary. It turned out very moist. Great served with dipping oil/seasoning just like in a restaurant.

Slow Cooker Creamed Corn
