My cooking triumphs

Hosting Thanksgiving every year for about 15 people. Last year I took a break for the first time but plan on hosting it again this year for a big group of friends. It's a lot of work but I love doing it!

No Bake Chocolate Oat Bars

Very quick, easy dessert. I doubled the recipe to make a 9x13 pan, & took the tips of using 1/2 c. less butter. I'm glad I did b/c the crust would have been far too greasy with more butter. I also made a thicker crust so only 1/3 of the oat mix went on top. Just thought it looked prettier to seem some of the chocolate.

Bruschetta Chicken Bake

A good, quick weeknight meal. I used canned diced tomatoes with garlic & basil & also put the cheese on top.

Lemon Macaroon Tartlets

Absolutely great when using Margaret's lemon curd recipe from this site, & fresh whipped cream on top. I took them to a bbq & they were gone before we had even started grilling! Next time I make them though, I will probably use a little less coconut & a little more flour as the crust was slightly more chewy then I wanted it.
