Bubba's Jambalaya

This was my first time making Jambalaya. It so so good ! I had only chicken broth to use, and I substituted crab meat for shrimp ( we prefer crab ) which I garnished each bowl along with the crumbled bacon right before serving. I think this made a beautiful presentation. Crabmeat stayed in tacked and bacon stayed crispy. I didn't use rice like traditional Jambalaya, instead I used Orzo because thay was what wanted to use up in my pantry. Actually, worked well because orzo stays in shape amongst all that stirring.

G's Flank Steak Marinade

Wow ! I marinated 7 Lbs. of flank steak in this marinade for almost 2 days for my Mexican themed dinner. It was fabulous ! Really... don't use anything but fresh garlic, onions and grated fresh ginger. Flavors are more pronounced, and makes a big difference. Everyone now wants the recipe !

Mexican Style Shredded Pork

I didn't have chipolte sauce on hand but I had chile in adobo sauce so I just used that. When I took the pork out to shred, I removed the whole chiles because I didn't want to be too crazy spicy for my kids. For those that like heat, this would be perfect for you, even with the chiles removed, it was still SPICY ! But good ! I didn't make rice with lime snd cilantro. Instead I used the squeezed lime juice on the finished shredded pork, and garnished with sprinkling of cilantro on top. My family actually ate mini slider style using dinner rolls. Flavors are great !

Slow Cooker Chicken Stroganoff

This is pretty good, but I have to agree on the saltiness of the dish. Next time I will use low sodium condensed soup, and if they make a low sodium dressing mix that would be good too. I added 1/2 c of white wine and about 1 can of water. threw some carrots in too. Toward the end I mixed in low fat cream cheese, couple handfuls of frozen peas for color, and couple of dashes of cracked black pepper. My family ate it over rice because I didn't have egg noodles on hand. We enjoyed it.

Chili-Lime Chicken Kabobs

Just made this for Memorial Day BBQ. I used both lime and lemon juice because I quadrupled the recipe and I didn't have enough limes. I marinated the chicken chunks over night then skewered them the next morning with pineapple chunks, red onion, red and orange bell peppers. These grilled kababs were soooo good !

Caldo de Res (Mexican Beef Soup)

I love this soup ! It tastes like the 'Cadillo soup' from my favorite Tex Mex restaurant. So flavorful and delicious ! I topped the soup with crumbled tortilla chips, and my boys loved it ! I didn't use Chayote. Instead I substituted with zucchinis.

Get a Husband Brunswick Stew

This was a great meal for a cold winter night, or nights...This recipe makes alot and plenty to freeze for later. Very kids friendly as well. My 4 boys loved it. I didn't use ground pork because I thought the ground beef was plenty, instead I diced some leftover Canadian Bacon and tossed in toward the end along with the cream style corn. I also added in Cannelli beans because my family likes beans. I think butter beans would of been great in this as well. I served this stew with crusty french baguette and a salad.

Cantonese Barbecued Pork

I grew up eating this, and I thought for a homemade version it was pretty good. Color is not the red vibrant color I am used to, so I did add a bit of food coloring in my marinade to brighten it up. It did come out much more like the real deal. Think I may cut back on the cinnamon a tad next time I make it though. Meat was very tender, thanks to the overnite marinating method.

Boilermaker Tailgate Chili

The flavors were deep and rich, I didn't use sausage because I didn't have any, so I used 1 lb. of bacon instead. There were alot of ingredients but that's what gives the chili the layers of flavors. I used one can of cannellini beans in place of a can of chili beans because we like a mixture of different beans. Served with shredded cheddar, sour cream, chopped scallions and tostido chips for dipping...YUM !

Beef Pho

YUM ! I love and eat pho all the time. This is alot of work but so worth it and is very very good for homecooked pho broth ! Every ingredient mentioned in the recipe is a must for the authenicity.... the daikon, fish sauce, down to the garnishes of Thai sweet basil ( not the Italian kind ) Sriracha sauce etc... I am telling you. The soup is so fragrant the smell will flow all through your house... Truely the ONLY pho recipe on this website that is worth your tastebuds. ***No lemongrass or garlic in pho !

Easy Meatloaf

Very simple and good. It's very moist. I didn't have enough of regular bread crumbs so I used japanese panko crust as well, and I think that made it more moist. I also decreased the kitchup in the topping mixture and mixed in some chili sauce. It gave it an extra zing !

Sesame Seared Tuna

Absolutely delicious ! I have also marinated the tuna in the sauce for a couple of hours before searing and the flavors really show. I made this as a first course for a dinner party once and used both toasted sesame seeds and black sesame seeds( both found in Asian isle )to coat. Served with Asian style cole slaw It turned out so elegant !

Classic Peanut Butter Cookies

Very good. I used reduced fat peanut butter, but increased to 1/2 cup along with 1/2 cup more flour and added vanilla extract as well. I also rolled dough ball in sugar and barely criss-crossed so the cookies did not flatten out.

Butternut Squash Soup

This was really good ! I also tossed the peeled and cut up butternut squash with olive oil and some garlic powder and roasted in the oven for 40 minutes. I think this process gives more flavor ! Then sauteed with onions, few fresh garlic cloves and couple slices of fresh ginger. Pureed everything together. Used only one cream cheese block. I did add more freshly grind black pepper and cayenne pepper at the end. HEARTY AND HEAVENLY !

California Cole Slaw

I used a bag of broccoli slaw mix, added chopped red onions and green bell pepper. I like it a little bit spicy so I added dash of red pepper flakes as well. It was light, tangy and delicious.

Asian Coleslaw

Very tasty ! super easy since I used bagged Asian slaw mix, than added in chopped scallions and cilatro.I served this under sesame crusted seared tuna steaks. Loved it !

It was pretty good. I used small white potatoes so it took shorter time to cook. keep an eye close so they don't burn because the garlic & shallots will be bitter.

Simply Parmesan Chicken

This was very easy to make and easy to clean up too. I lined the baking sheet with foil sprayed with olive oil. toss foil and you're done with cleaning. I used wheat bread crumbs, and added garlic powder, black pepper, and minced dried onion along with Italian seasoning. So Healthy and my kids loved it ! Just be careful not to overbake. The breading will burn and chicken will be hard and dry.
