Oatmeal and Wheat Flour Blueberry Pancakes

Very good. I changed a couple of things - sorry, I hate rating a recipe that I have changed, but it was still really good - skim milk instead of soy, applesauce instead of oil, no blueberries, and a splash of vanilla. It was great and very filling. My very picky 11 yo stepson ate them with no complaint (very rare for him!). We had them for dinner, and it made enough for 2 meals easily, and we are hearty eaters. This is my new go-to pancake recipe! Thank you!

Honey Cornbread

Absolutely delicious. I used milk instead of cream to save calories, and used half oil/half water instead of full oil. Still awesome, this will probably be the recipe I use from here on. I made a corndog casserole type dish from adding a package of chopped veggie hot dogs and a handful of cheddar. I will make again.

One Bowl Chocolate Cake III

This is a great cake, and it was pretty easy, too. It tastes just like the chocolate cakes my mom made when I was a child. I replaced the oil with unsweetened applesauce and there was no difference in taste (the family didn't know! and couldn't tell!) plus I saved 109 grams of fat and 920 calories. Thanks for the recipe!

I made some changes and they did not work out, but I am rating this highly because I am sure the actual recipe would taste better. But just so you know, cheap white rum does not work well in this recipe.

Curry Pumpkin Soup

I enjoyed this recipe, but I did need to add a bit more sugar, a bit of pumpkin pie spice and some cumin to give it a little more flavor. I used fresh pumpkin (3 1/2 cups worth) instead of canned. I served with a dollop of sour cream on top and saltines. I really liked it, but the rest of my family had mixed reviews on this. Next time I make it I may add some diced potatoes, carrots, and chicken for them.

Microwave Lemon Curd

This was a perfect recipe. Delicious. I halved it and it came out just fine. It thickens after you put it in the fridge. This is one of the best things I have ever eaten.

Raspberry Lemon Muffins

Very, very good. Does not taste low fat or healthy at all :) I used a frozen berry mix and fat free blackberry yogurt, and I omitted the lemon zest because I don't have any. I will make this again I am sure.

Pinto Bean Cake

I really did not care for this. It had a strong bean smell that I had a hard time getting past. I usually really like both fruitcake and spice cake, which is why I made this. However, it wasn't my thing.

Pumpkin Cheese Pie

Yum. There was a lot of filling, so after pouring what fit into a deep dish pie crust, I poured the rest into a 500ml corningware dish. Made a nice little custardy type dish. Easy to make, and very tasty. I will make this again :)

Frijoles I

These were okay, but lacked flavor. I added a lot of extra spices. Also, The texture was sort of weird - I cooked the beans for 3 1/2 hours after soaking overnight and they still seemed a little under-done. ***update the next day - I just made enchiladas with the leftover beans and they were incredible. No weird texture or anything. I will definitely make this again!

Grandma's Doughnuts

Really very good, much better than I thought it might be. I would rate the taste a 4, but the easiness of the recipe makes it a 5. A couple tips: I made two batches. The first batch I used a small tube of bicuits and the second time a big tube - like grands size - to make regular sized doughnuts. The small biscuits work MUCH BETTER than the big ones. The glaze that I put on them really balanced the biscuit taste so that it tasted much more like a doughnut than the second batch, which had a way too high dough-to-glaze ratio. Also, the big ones were doughy unless fried for a much longer time, and tasted a little too done for my liking by the time the insides were done.

Bob's Stuffed Banana Peppers

I am a vegetarian, and I adapted this recipe. It was awesome. I used fake sausage to replace the meat, and I halved the filling recipe, and still had enough for meatballs left. I also used half bread crumbs and half oatmeal, and canned spaghetti sauce. I used banana peppers and jalapenos. It was really good this way, if any other vegetarians are interested - my father in law ate his up and had no idea that it was meatless until I told him. I will definitely make this again!

Mock Coconut Pie (Spaghetti Squash Pie)

This smelled SO GOOD while baking. It tastes pretty good, kind of like a custard pie with a crunchier texture. I will make this again. Very easy to make if you have the spaghetti squash prepared beforehand.

Banana Bread

This recipe was pretty good as far as vegan recipes go, but we preferred a more traditional banana bread. This bread had a really dense texture - almost like regular bread, without the crust - and a really strong banana flavor. We enjoyed it toasted with a little butter.

Thai Curry Tofu

I used red curry powder, omitted the cilantro and added carrots. It was very spicy. The sauce was a little thin, but I used lite coconut milk which may have made the difference. Overall, I didn't really like it too much, but maybe I would have liked it better with chicken.
