Stuffed Zucchini I

My family loves this recipe, but I make it a little differently. I scoop out the zucchini and cook the "innerds" with some minced onion and garlic in the microwave with a little water. I drain that and mix it with cut up stale bread (if I use dry bread crumbs, I moisten them) and cheese (sometimes cheddar, sometimes whatever is on hand). Add salt & pepper to taste. Mix together and spoon into the zucchini boats, top with shredded cheese and bake. If you like it spicy, try a little pepper jack, but part of the beauty is being able to taste the zucchini, not just spices.

Spinach Casserole

Spinach is one of those things alot of people turn up their nose at! This dish had them eating it, though. I don't think it needs alot of spicy embellishment -- let the simple flavors work. I might try a little cream cheese next time just to see if it could be creamier.

Praline Sweet Potatoes

Campbell's® Easy Chicken and Cheese Enchiladas

This makes a lot of enchiladas, but most were gone by the end of the evening! It was very easy to make ahead and then just pop in the oven before our friends came over. Good flavor!

Chicken Tortilla Soup IV

excellent! Very easy and very tasty. I added some crushed tortilla chips to the soup and let them simmer in for the last 15-20 minutes and they added a nice flavor as well as thickened the soup.

Avocado Pie

I love avocados and maybe because I was expecting it to taste like avocados, I was disappointed. I made this for a gathering of lady friends and we all agreed it was more like a creamy key lime pie than avocado. You probably need the lemon juice to keep the avocado green, but it overpowers the delicate avocado taste. Good, just not enough avocado flavor. Maybe more avocado, less juice? Not sure.

Old-Fashioned Scalloped Corn

This is an old, family recipe. I have been eating this for Thanksgiving since I was a baby! While it is not fancy or in any way wow-inducing compared to some of the recipes on this site, it is my idea of comfort food. It is a lovely side for a meal, easy to prepare, and just about everyone likes it. what more do you want? Tradition at its finest!

Spinach Enchiladas Verde

Definately cook your spinach first! I think that was the problem with the tortillas falling apart -- too much liquid! Also, if you heat your totillas slightly in the microwave before rolling them they will be much easier to handle and not tear so easily. I like the recipe, but will also add some other veggies to it next time - onions, mushrooms, beans and maybe corn. I had never thought to use spinach in enchiladas before.

Frank's Famous Spaghetti Sauce

Good beginning. I would eliminate the bell pepper, use 1/2 the tomato paste, and add a couple of dried red chili peppers and a bay leaf as well as increasing the basil, oregano & garlic. I like my sauce with a little more bite, and a little less tomato flavor. Letting the sauce simmer for awhile longer helps those flavors meld also (at least 30-45 minutes). Veal is delicious, but turkey & beef more economical and still very tasty. I say use what you have or feel you can afford. Top the whole thing with some nice grated parmesan. Great meal!

Bacon Ranch Pea Salad

OK, a "son who loves peas" -- let's talk about THAT! Good job! My mom made a pea salad with cheese cubes, green olives and walnuts which is one of my favorites, but this is just different enough to make it into the rotation. Thanks!

Beef Martini

This was a very tasty marinade. We had cut up stew meat (very inexpensive), so I was looking for a marinade to add flavor and tenderize the meat. I skewerd the beef with onions, peppers, and mushrooms and grilled them, basting the skewers as they cooked. It was delicious! I think next time I will try a little more of the "martini" and a little less of the "BBQ sauce" though, as it totally overwhelmed any "martini" taste! but thanks for a great idea!

This was a wonderful, fresh addition to our summer meal. I would omit the raisins next time (just didn't seem to work with the other flavors), but loved everything else. Easy to make and delish!

Slow Cooker Stuffing

I am not sure this is the exact recipe I used last year for my dressing, but it was not hard to estimate how much broth to add, (just add enough to make it moist, not runny!) and it turned out perfect! It saved room in my oven, and no one realized it came out of a crock pot instead of the turkey! Fabulous!!

Smoked Salmon Mousse

I have used a very similar recipe for some time. I do not use liquid at all (or any roe), but do mix in some sour cream to loosen it up and add tabasco and very finely chopped onion. Always a big hit!
