Fluffy Carrot Muffins with Cream Cheese Frosting

Not the prettiest muffin (and I followed the recipe exactly), so I would think twice before making these for a gathering, but they tasted great! Of course, the frosting might dress them up a bit. I didn't make it because I was just looking for a way to get more veggies into my kid's diet.

Barbeque Chicken

So moist & delicious! The only substitution I made was to use boneless skinless breasts instead of thighs. So I also had to adjust the cooking time: 15 min. at 500 degrees then 30 min. at 300 degrees (taking the lid off for the last 10 min.). The sauce had just the right amount of spice & sweetness. Thanks for a great dinner idea!

Italian Breaded Pork Chops

So good! Very tasty. I mixed the minced garlic into the egg/milk mixture and that worked well (so you don't have to fish little pieces out of hot oil).

Dee's Roast Pork for Tacos

Waaay too much chili powder. That taste overpowered everything. Not sure why this has gotten such sensational reviews. I followed the recipe exactly, but my husband wouldn't even eat leftovers.

Basil Tomato Soup

I tried to cut back on the fat (as suggested by other reviewers) by using whole milk instead of heavy cream & it was too acidic.

Strawberry Muffins

I made the recipe "as is" and they baked up beautifully but lacked flavor. I didn't want a very sweet muffin, but these were too bland. Maybe next time I will add some brown sugar, vanilla & cinnamon as other reviewers suggested.
