Fluffy Carrot Muffins with Cream Cheese Frosting
Not the prettiest muffin (and I followed the recipe exactly), so I would think twice before making these for a gathering, but they tasted great! Of course, the frosting might dress them up a bit. I didn't make it because I was just looking for a way to get more veggies into my kid's diet.

Barbeque Chicken
So moist & delicious! The only substitution I made was to use boneless skinless breasts instead of thighs. So I also had to adjust the cooking time: 15 min. at 500 degrees then 30 min. at 300 degrees (taking the lid off for the last 10 min.). The sauce had just the right amount of spice & sweetness. Thanks for a great dinner idea!

Italian Breaded Pork Chops
So good! Very tasty. I mixed the minced garlic into the egg/milk mixture and that worked well (so you don't have to fish little pieces out of hot oil).
