Vegan Chocolate Cake
I loved this recipe. Moist and delicious. I find too many vegan recipes involve a ton of obscure ingredients- this is nice and simple. I did make a few changes to make it a little healthier. I decreased the sugar to 3/4 cup, replaced the oil with unsweetened applesauce, and added 1/2 tsp ginger to give it a little kick. Also, in my oven at least, it was finished in under 40 minutes, so watch out that it isn't overcooked.
