Vegan Chocolate Cake
I loved this recipe. Moist and delicious. I find too many vegan recipes involve a ton of obscure ingredients- this is nice and simple. I did make a few changes to make it a little healthier. I decreased the sugar to 3/4 cup, replaced the oil with unsweetened applesauce, and added 1/2 tsp ginger to give it a little kick. Also, in my oven at least, it was finished in under 40 minutes, so watch out that it isn't overcooked.

Maple Pancakes
I made a few changes- I used unsweetened applesauce instead of oil, omitted the maple syrup, and added a half teaspoon cinnamon and a teaspoon vanilla extract. It was delicious. However, the recipe says it is for two. My fiance and I are both athletes ho love to eat, and this made two breakfasts for each of us. I would say the recipe is for four.

Stuffed Peppers with Creole Sauce
This came out really well. I prefer a bit more spice, so I doubled the chili powder and the sugar, and added a good amount of fresh ground black pepper. As I did not have cloves, I added a sprinkling of cinnamon. And to make it a bit healthier I substituted lean ground turkey for the ground beef, and used brown rice instead of white. I would definately make this again.
