Strawberry Lemon Trifle
I made this for the dessert part of a chili cookoff at church and it was a hit! I of course made some changes to it :) I used yellow cake. I did not add the cream cheese and I used vanilla pudding mix with the lemon yogurt and doubled them both for more of the pudding layer. Since my strawberries were so beautiful and I was in a hurry I just used some strawberry perserves then layered the sliced strawberries on top of that. To top it off I took three of the big strawberries, removed the stems and cut them to fan out and then placed one in the center with the stem on. Not only a beautiful dessert but cool and refreshing!

Grilled Fish Tacos with Chipotle-Lime Dressing
We made this for company that came in from out of town and it was a hit. No leftovers! I had to change the dressing and use green chiles, since they did not like spicy food. I have made it both ways and they are equally great. I bought shredded lettuce (since I was not to sure about the cabbage) and cabbage; and the cabbage ended up being the favorite.

Make-Ahead Spinach Manicotti
This was so easy, I was totally amazed! You really do need to use a sause that has lots of flavor. I would add onions and more garlic next time to the spinach. I put the spinach mixture into a bag with the tip cut and piped it into the shell (much easier than a spoon).
