Vegetable Ham Stew
I liked this recipe, I'm a big "stew/soup" maker, when there is left over"stuff". However, I tweaked it a tad. Hubby and father in law LOVED it! I even had 2nds! :)Try it , you'll love it!! Kim I did the following: INGREDIENTS 2 cups water 2 cans chicken broth 2 (14.5 ounce) cans diced tomatoes, undrained (one had basil,oregano flavoring) 1/2 of a shredded cabbage 3 cups diced fully cooked lean ham 1/2 package of Hillshire farm Smoked sausage(the 2 long "rolls"), I use one, cut in pieces I used 1 bag of Green giant Steamers mixed veggies 3 med size red potatoes-skin on 1 1/2-2 cups chopped celery 1 med to large yellow chopped onion 1/2 cup chopped green pepper 1/2 t brushed sage 2 teaspoons dried basil 3/4 teaspoon pepper 3 garlic cloves chopped 3 bay leaves 1 Tbls Extra Virg Olive Oil 1/4 cup cornstarch 1/4 cup cold water DIRECTIONS: In a Dutch oven or soup kettle, combine the potatoes,ham,broth and water bring to a boil.Cook until potatoes 1/2 done, add the rest, let boil for 30 minutes, Reduce heat; cover and simmer for 1-1/4 hours or until cabbage is tender, stirring occasionally. Combine cornstarch and cold water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened. Discard bay leaves.
