Delicious Ham and Potato Soup
Wow, this soup is fantastic. I cooked the broth, onion, celery, and meat in a slow cooker for 6 hours. I did not have any ham on hand, so I used two small smoked pork shanks instead. After slow cooking, the meat fell right off the bone. This substitution gave the soup a wonderful smoked ham flavor. I finished the soup as directed, adding a few slices of velveeta for a cheesy finish. To thicken the soup, I simply took the lid off the pot and let it reduce naturally. Yum!!!!

Lemon Icing
I found it to be too sweet and too thick, so I added a bit of softened light cream cheese. I then used this to ice a lemon cake, but I feel it would be better suited as a lemon cookie or sugar cookie frosting since it is so sweet and thick.

Easy Cheesy Chicken I
What comfort food--the chicken was so tender! I followed this recipe as directed. While I did enjoy the results, I agree that the recipe was a bit bland. Next time, I will add more garlic powder, onion powder, salt and black pepper. To call this recipe "cheesy chicken" is a bit of a misnomer. Creamy chicken would be a better descriptor, as the cheese flavor of the soup was lost among the cream of mushroom, cream of chicken and sour cream.
