Baked Chicken Nuggets
This was delicious and fast. I made the recipe exactly as is except for the bread crumbs, I substituted panko crumbs because thats all we have in the house (panko crumbs make a delicious breading). My son thought this was the best chicken he ever had and said "Wow these chicken tenders don't even need ketchup." :) (and that says a lot from him.) I also always bake "breaded" meats on wire rack as this helps to avoid soggy bottoms. Thanks so much for this recipe. It is a keeper! Oh and by the time you are done you probably will have used only about a tablespoon of butter on all of the chicken so don't substitute it, just use it. It really makes the tenders, well, tender! :)

Cinnamon Bun Icing
This was a good cream cheese icing for warm cinnamon buns. I have tried over 30 recipes to try and find the perfect icing and this is almost there. PROS-Spreads easily over warm buns; easy to make while buns are baking; most us have these ingredients at the ready. CON-(there really is only one and it is personal preference) The flavor has a very strong cream cheese taste. I like cream cheese frosting but I don't want to feel like I am eating a bagel. I will try cutting the cream cheese in 1/2 next time.

Mini Pumpkin Butterscotch Muffins
This was a delicious spin on pumpkin muffins and as many have said the butterscotch and pumpkin combo really is yummy!!!! The only ingredient change that I made was replacing the nutmeg with ground clove. I am not a fan of nutmeg, and the clove is a great replacement. I made a loaf and regular size muffins (6 to a pan). I followed some other suggestions for the cook time with the loaf and it was not long enough (the middle was still not cooked all the way through after 45 minutes.) If you are going to make a loaf, bake time will be about 70 minutes at 350. I cooked the muffins at 350 for 19 minutes and they were perfect. I will definitely make these again. They were a hit with my husband’s coworkers and my family!!
