I like quick and easy stuff to make during the week, but on the weekends, I like to take the extra time to make something really special.

I love crockpot cooking during the workweek. On the weekend, it could be anything that sounds good!
My favorite family cooking traditions
Now that I have kids, I love preparing things and having them help me....they always seem to eat more that way! Of course, there are all the favorites that make the holidays special.
My cooking triumphs
the first time I made tamales all by myself, from scratch! I had never made them before, or seen them made, but I just wanted to give it a whirl!
My cooking tragedies
There have been a few hits or misses, but no horrible inedible meal or ruined holiday dinner (yet!)

Easy Ice Cream Sammies
these were a fun treat to make and eat. I liked that the cookie part was soft (even when frozen) so that the icecream didn't squish out. I copied Trisha's picture and rolled the edges in sprinkles....very cute! A tip that made the cookies more uniform and not too thick......I spooned out the batter onto the cookie sheet and flattened with the back of the spoon into a circle. Then with fingers dampened with water, I was able to smooth out the surface of the cookies (the dough is very sticky, thus the damp fingers!). Without this bit of smoothing out, the cookies were kind of lumpy and bumpy. I will make these again, the kids and grownups both enjoyed them.

Rosemary Ranch Chicken Kabobs
WOW, I loved this dish!! I did as the top reviewer did and baked it in the oven. I did mine at 425 for about 25 min, but I could have pulled them out a few minutes earlier! I skipped the salt and sugar, and decreased the olive oil to suit our families tastes. This was very good and the sauce was great over basmati rice. I will totally make this again! It would be a very quick meal to throw together by preparing the marinade and chicken in the morning, and then just baking at dinner time. Thanks for a great family recipe!!

Speedy Blueberry Refrigerator Jam
I forgot to review this when I made it last summer. This was my first time ever making jam and it was quick and simple! I did cut the sugar to 1 1/2 cups and that was the right amount of sweetness for me!
