Chocolate Oil Cake

The texture of this cake is nice but it's not very chocolatey and has an off flavor to it. The next time I want cake, I'll just wait until I have eggs on hand.

Easy Apple Cinnamon Muffins

I made the entire recipe as instructed except for one thing, I halved butter in the struesel. Another reviewer was right, it is far too much. It was tasty but don't go to heavy on the topping, it's overpowering at times.

To Die For Blueberry Muffins

Good muffins. Definitely use liners as they are extremely difficult to get out (I used silicone and it STILL stuck). The topping is enough for double the number of mufffins. Mine spread but not too badly, it made for a pretty muffin top and dwarf looking muffins. Not the prettiest ones I've made.

Black Bean and Salsa Soup

This recipe is tasty as is but the flavor was a little flat for me. I sauteed some bell pepper, jalapeno and onion and then threw that in the blender with the soup. That addition made this soup just perfect for me. Really fast and good.

Coconut-Cornflake Cookies

These are not bad but they are very sweet. I love sweet stuff so I completely disregarded the reviews warning of this. If you like coconut candies, you'll love this. If you're looking for cookie in the traditional sense, this will be a bit of a disappointment.

Potato Skillet

Good and quick breakfast. It's got everything in one pan so it eliminates multiple pans and it's quite tasty. We added some jalapeno to ours while the potatoes were cooking for some added kick.

Yummy soup! I made exactly as instructed, velvety smooth and filling. I can see adding some grilled chicken breast to it but it's good for me as is. I made this on a stormy night. :)

Nice and spicy. I feel like it needs something more. Possibly minced ginger, thinly sliced celery, and maybe even some crushed peanuts. As is still pretty good.

Strawberry Orange Coconut Smoothie

Ahhh!!! I feel like I'm on a beach when I close my eyes and sip this. So yummy! I couldn't find coconut milk in the store but I did find cream of coconut. I don't know how close they are but I decided to use 1/4c cream of coconut and 1/4c skim milk to sub. I blended that first to make sure it was smooth then threw everything else together. This is my favorite!

Great smoothie! The banana and yogurt make it so smooth and the mango flavor is really prominent. I also love that it doesn't require ice since it seems we never have any on hand.

Nice and refreshing. Very much like a slush and not very smooth. I agree with other reviewers, it really needs a banana. Also, I omitted the sugar and we didn't miss it.

Salsa Chicken Rice Casserole

I had to make several adjustments for this to be good for my family. Plain, poached chicken is extremely bland so I cubed it before cooking and then sauteed it with salt, and onion and garlic powder. Then fat and calories in this is too much to take so I just used the 98% fat free soups and no one can tell the difference. I layered as directed but the onion on the top layer doesn't cook through. The rest of the casserole is cooked through and then there are these odd pieces of raw onion. I hate raw onion so I had to cover with foil and baked nearly twice as long as the recipe instructs. End result was good but will definitly finely dice the onion, saute the chicken, continue using the low-fat soup, and cover the dish while baking next time.

Chewy Peanut Butter Brownies

Not quite cake, not quite brownie. It's a nice in between. I used crunchy peanut butter and added peanut butter chips to make it a little bit more peanuttier. I liked it much better that some blondie recipes I've tried.

Cilantro Serrano Cream Sauce

Love this sauce! Awesome and so full of flavor. I served it on top of grilled chicken tacos but I can definetly see this being great on fish tacos. I hate using cream for anything so I decided I had to sub half and half for it. Of course it came out rather thin so I took an extra step and threw everything in a saucepan, added 1 tbsp of cornstarch dissolved in a little water. It thickened beautifully and it was still awesome!
