Grilled Peanut Butter and Jelly Sandwich

I've been making this sandwich for myself and whoever I could convince to try it since I was a teenager. YUM YUM YUM!!!!! If you love peanut butter and jelly, you MUST try this. Words can't express the deliciousness that is "Grilled Peanut Butter and Jelly".

Cream Cheese Frosting II

I did not love this frosting. The taste was pretty good, but I actually would have preferred more of the cream cheese taste and less of the butter. The biggest problem I had was the frosting LITERALLY ran right off the cake as soon as it reached room temperature. This caused the top layer of cake to slide about three inches to the right. Once re-refrigerated, it was fine and hardened right up. Sorry, this one just wasn't for me.

Korean BBQ Chicken Marinade

Great marinade! I didn't add as much sugar(less than half)and had to leave out the hot stuff. I also threw in some green onion. I can't decide which way I like better,as a stir-fry, or on the grill. It's awesome both ways!

Steak Burritos

This is a really versatile recipe! I made tacos instead of burritos, because that's what I had in the house. I had a small roast sitting in my fridge,and I wanted to try something new with it.(tired of the same old pot roast and potatoes!)I sliced it in half horizontally, so ended up with two pretty thick "steaks". I also didn't have the chile peppers, but salsa seemed to work fine. I was worried that it might come out too salty, as some reviewed,so I put one packet of seasoning in at the beginning of cooking, and after shredding it and tasting,I ended up adding another half a pack. Husband liked it alot, so I'll definitely make this again. I'm thinking this might be fun food for a crowd, like a build your own taco kind of thing.

Salsa Chicken

It's a good day when both husband AND child like a new recipe. This was a success for me. I had to make my own taco seasoning(chili powder, cumin, garlic and onion powder,salt and paprika).I also used 2% colby/jack, since it was all I had. It came out beautifully. Thanks!

Almost No Fat Banana Bread

The only change I made was to throw in some walnuts and a small handful of mini chocolate chips. (I love chocolate in banana bread, and you only need a tiny bit to get a big boost of flavor!)I'll try this as muffins next time. Thank you for this nutritious and delicious recipe!

Catch of the Day

I served this for my husband and myself for Valentines Day. I had some extra limes to use up, so I threw them in, too. I also added fresh oregano and marjoram(what was I thinking on that one?)which really made for a strange taste.I hate to let things go to waste, so I'll often just toss them in with the other ingredients, hoping for the best. I will try this next time as written. I cooked them for about eight minutes per side, which was perfect. Overall, a yummy, fun way to cook fresh fish.

Blonde Brownies I

Delicious!My husband loves white chocolate, so I subbed white chips for the chocolate chips. I then served with a scoop of vanilla bean ice cream and a drizzle of hot caramel sauce. I think the regular chocolate chips would have made a better contrast to the vanilla and caramel. I'll try it that way next time. I agree that this is very much like a giant cookie.I cut the brown sugar down to 3/4 cup.(I can't even imagine how sweet it would have been otherwise!)Thanks for a wonderful, restaurant quality dessert.

Marshmallow Popcorn Balls

So fun to make! I thought I was going to have a huge hassle with this one,but I was so wrong. I needed a last minute treat for my daughters class' Valentines Day party(how could I have forgotten?), and we had almost all the ingredients on hand already.I had hubby air popping the corn while I ran to the store down the street for the rest! We quadrupled the batch to make thirty, and ended up with FIFTY! I added one small box of sugar free mixed fruit jello,that was a great suggestion. They were nice and pink with a fruity taste. I'll experiment with other colors/flavors,possibly seasonally, and also try it without anything extra. Thank you for an easy, fun and delish recipe!

Tasty Lentil Tacos

I wish there was more flavor here. I followed the recipe as written, but I definitely think there is room for improvement.Overall,I'd say it went pretty well. My daugher would not even try it, but my hubby really enjoyed it. I'll make this again, and maybe add a bit more seasoning. Thanks for an interesting and nutritious recipe!

Lime Muffins

Wow was this batter thick. And the final product was SO dense. Like another reviewer mentioned, they reminded me alot of corn muffins. After tasting one, I decided it needed some more moisture and an extra kick of lime. So, I mixed together about half a cup of powdered sugar with maybe two TBSP lime juice. This made a really thin glaze, which I just spooned onto the tops of the muffins. After sitting for a couple of hours the glaze had dried a bit and whoa! was this exactly what I was looking for! And even better the next day! As is, I had to rate this a three, but with the glaze, a solid four star recipe. I will definitely make these again.

Broccoli with Roasted Red Peppers

Yum yum! This is a grown-up recipe. I've been searching for a broccoli recipe that didn't need a ton of butter or cheese sauce, and TA-DA! I substituted olive oil for the butter, and added the salt in to the broccoli water rather than with the garlic and peppers. My daughter wouldn't touch the peppers, but loved the broccoli itself. Thanks!

Chicken Crescent Casserole

Very versatile recipe! I've made it twice now, using what vegetables I had on hand, and both times the outcome was delicious. The first time I added diced potatoes and corn(canned) and omitted the celery, since I didn't already have any. The second time I needed to use up some chicken that had been marinaded in jamaican jerk sauce and cooked on a charcoal grill.This really changed the whole flavor of the dish. I added peas for color,and some fresh sliced mushrooms. I also stirred the cheese into the mixture rather than leaving it to sit right under the "topping", which I think REALLY made a big difference. Both times, I've cut the mayo in half.

Perfect Pumpkin Pie

The name says it all! This pie is perfect. I made two of them to serve at Christmas, and they were a big hit. I thought they were best without any whipped cream so you really got the full effect.

Boiled Fruitcake

I loved this cake. I first soaked the chopped fruit in about 1/2 cup of brandy for three days. I really think it made a difference. I followed the cooking instructions almost exactly, with the newspaper and all. I did only cook it for an hour instead of the whole hour and forty,though. I think it would have been way too dry otherwise. I made the cake two weeks before Christmas and let it sit in my fridge in a large tin. Every other day I drizzled it with a little brandy. So delicious! I even got a friend of mine(who DOES NOT like fruitcake,haha)to admit that it was very good.

Pumpkin Chocolate Chip Muffins

Okay, so I thought,hmmmm, if applesauce is my usual substitute for oil, how rockin' would my(ahem)HOMEMADE APPLE BUTTER(supreme apple butter from this sight, yeah, I know I'm bragging)be? It worked beautifully. I doubled the recipe, used mini chips, and extra pumpkin. Next time I might try the cinnamon chip, or even leave the chips out. I think the pumpkin flavor is really hidden, even with the extra I added. Great recipe!

Supreme Apple Butter

This recipe is SO amazing. I had to use a little less cloves, and I used regular brandy, because it was all I had. I made one batch and I really wish I had doubled or tripled it. My husband and I canned them in 15 half pint jars, using the hot water method. Making this was relatively easy,the only part that took a lot of time was actually peeling the apples. I am going to make this again and again, and my family and friends will definitely be receiving some for Christmas. Thanks for an awesome recipe!
