About this Cook
I live in Northwest Indiana, about 30 miles from Chicago. I am 44 with 3 kids, a dog, cats, a significant other and two ex-husbands and a full-time job. Not alot of time to cook as much as I'd like to!

I make an awesome jalapeno popper that people request over and over for parties. Sandwich roll-ups and a breakfastcasserole, as well. Mmmm

Roasted Vidalia Onions
This is great and simple! Needed 30 minutes, though. I also added garlic to the butter and bouillion and always use Vidalias. A big hit served with steaks or burgers! Thanks!

Jalapeno Chicken Dip
Great recipe! I add an extra can of chicken to thicken, plus extra jalapenos, a can of diced tomatoes w/ chiles and if I have any on hand, some roasted red peppers from a jar. We like it spicy! Serve with frito scoops. Yum!
