Kathy's Delicious Whole Slow Cooker Chicken
This is my go to recipe for freezing shredded chicken. It literally falls apart once it is cooked and I divide it into batches for enchiladas, soups, or anything one needs shredded chicken for. Delicious!

Breakfast Sausage Roll
I cannot find the white bread dough in my country(Italy) so I use a standard refrigerated round of puff pastry instead. This is very good as written but my favorite is the option mentioned up top with the pizza sauce (I sparingly use VERY thickened tomato sauce with salt and garlic, otherwise the liquid pools at the bottom and the bread becomes soupy and doesn't cook properly). This recipe usually feeds us twice and so I freeze one half the mixture for a later date. It is excellent!

Sean's Falafel and Cucumber Sauce
This is one of my favorite recipes. I usually cook the chickpeas first in the slow cooker in bulk, freezing leftovers later for hummous. Sometimes fried foods that call for assembly can fall apart in your hand even before they make it to the pan, but not this one. These falafel stick together well, making frying a snap. We never have leftover cucumber sauce and I even add a bit more cucumber to make it last a little extra with this. We pile it into pitas with chopped tomatoes, a little onion, sliced pickles, the cucumber sauce and a little hot sauce.
