About this Cook
Hi:) Still thinking of what I should write about me.....check later:)
My favorite things to cook
My favorite meal to cook is thanksgiving. I love the smells of Turkey and dressing blended with the sounds of laughter from my family. My best memories of home are ones where we spend time together in the kitchen. I mostly enjoy cooking comfort food:) Winters are long here in Minnesota a good cassarole recipe goes a long way:)
My favorite family cooking traditions
At Thanksgiving there's a few dishes that MUST be on the table. Besides The main ones, there must be green bean cassarole for my sister, cheesecake for my son and slow cooked corn with cream cheese for me.
My cooking triumphs
Spending all day in the kitchen and watching everyone's faces as they sit at the table and smile:)
My cooking tragedies
When I was 21 I was asked to make beef brisket for a dinner my husband had invited his closest friends to. I was so proud of myself as I followed directions exactly. When it was time for dinner, the meat was horrible and dry. I had mistakenly bought corned beef instead of beef. Then the sweet potato cassarole I topped with multi colored marshmallows, turned a gross gray when all the colors melted together. Lastly, when it couldn't possibly get any worse, I lit my rum cake on fire and it actually blew up. I almost needed therapy after that.

Pork Fried Rice
I searched all the fried rice recipes before deciding on this one. I was not dissapointed. In fact, I was pleasantly suprised:) I even included the ginger which I'm not a fan of but it added a nice touch of flavor. The only things I did differently was I used more butter when frying which I did on my pancake grill..worked like a charm! I added bean sprouts also. When I combined all ingrediants, I fried on my pancake grill until golden brown....added green onions at the very end....so yummy! Thanks for a fried rice recipe I will use again, and I'm very picky!

French Bread Rolls to Die For
First of all, if you don't have a KitchenAid mixer...go get one! I used mine based on the advice of another reviewer and it worked fantastic! These rolls are very easy and fool proof. I will say that I didn't realize they would raise as much as they did during baking. I wanted larger rolls as I was making potato soup to go with them so I shaped the dough into 6 rolls. They were huge:) I followed the advice of another review and sprayed twice with a fine mist of water during baking. This created the most wonderful chewy crust. A fantastic recipe and easy to make if you want a fool proof bread recipe. This is a keeper in my house now!

Baked Chicken Reuben
I made this recipe because it sounded so weird I had to try it. I have to admit it looks weird but both myself and my husband, (who's a picky eater) loved it! As far as presentation, the parsley adds a lot. Also, the dressing mellows out the kraut and the flavors blend nicely. When serving, I reccomend a veggie with color to brighten up the plate. Also, as others have mentioned, 90 minutes is way too long to cook. An hour was perfect. Next time, I am going to chop the chicken before baking and add either Canadian bacon or chopped prosciuto to make more of a cassarole. All in all, a very yummy dish!
