Chocolate Banana Bread Pudding
This was outstanding! I left out the chocolate and added golden raisins, added a third very ripe banana (mashed) to the liquid mixture and grated in some fresh nutmeg. I also used 1/2 cup of light brown sugar and 1/4 cup of regular sugar. Served it with a caramel bourbon sauce. Everyone gobbled it up!

Easter Breakfast Casserole
This casserole was a big hit at our Easter brunch. Like other suggested, I lined the pan with the potatoes and baked them for about 15 minutes before adding the egg mixture. I also used a combination of sausage and bacon and used sweet peppers and scallions. Delicious!

Beef and Irish Stout Stew
This was absolutely delicious...even better the second day! I made it for St. Patrick's Day and served it over mashed potatoes, and everyone loved it. Hearty and very satisfying!
